How to Roast Red Cabbage: Pantry Staple Spotlight
What to do when I get given 4 red cabbages each one weighing at least 2.5kg?
Well decide on a pantry staple spotlight on red cabbage of course. And then try 10 different cabbage recipes in 10 different ways. And then do the very hard job of eating all the finalists and narrowing it down to the three that would make it into the pantry spotlight. Oh yeah.
And the first in line is this simple roasted red cabbage. Which is perfect really as winter sets in and red cabbage abounds. OH loves it simply on top of this herb and chilli pizza along with some anchovies.
Roasted red cabbage is easy peasy. Pretty much shred the cabbage and toss it with some olive oil and salt and roast for up to 25 mins. it is important to mix the cabbage a couple of times during roasting so that they roast evenly. The red cabbage is just very slightly sweeter when roasted and becomes a perfect accompaniment to the those slightly tangy dishes.

How to Roast Red Cabbage
Ingredients
- 500 g shredded red cabbage
- 1 tbsp olive oil
- Salt
Instructions
- Pre heat oven to fan assisted 160 C / 180C / 350F / gas 4.
- Combine cabbage, olive oil and salt and roast in oven for between 15 to 25 mins until the cabbage is roasted.
- Smaller cabbage shreds roast quicker and bigger shreds take longer.
- Make sure to turn the cabbage at least once so that it cook evenly on all sides. This is because if cabbage burns it gets a little bit bitter.
- If a few bits of shredded cabbage burns then just pick out and discard them.
I had no idea that you could make so many wonderful recipes with cabbage. Though not the biggest cabbage fan, this soup and the other recipes that you made are awesome!
