Freddy and I are going to be hosting a get-together for university friends this summer. It is something we do every 2 years and our friends come from all over the world, including Norway and South Africa, for a long weekend full of eating, great cocktails, walks, activity and generally just catching up.

I have been slowly working out what the eats and drinks are going to be for this. So it was rather serendipitous that a hamper from the Thebar.com arrived on my doorstep. As I browsed through their extensive cocktail range my eyes fell on their Pimm’s No1 and Lemonade cocktail and I was sold. And it seems that I am not the only one as according to their research, the majority of people who live in the southern UK prefer this cocktail too.

So I got a few of my neighbours together for a cocktail testing session. We whizzed through my kitchen grabbing some jugs, chopsticks for stirring, chopping board for those lovely fruit and cucumber and whipped up the cocktail in 5 mins. We all agreed that is our kind of cocktail, easy to make with a whole load of easy.

As you can see from my phone snaps we had a fun evening catching up as we sat in the warm sunshine enjoying our cocktails. And we quickly made up another batch when a few latecomers arrived. We all love it and I will certainly be shaking this up during our party weekend in the summer. Now that my Pimm’s No1 and Lemonade cocktail is sorted, I had better start thinking about the food.

TheBar.com have kindly put together some cocktail tips for those of you who want to make your own cocktails.
#1 No sugar syrup? Replace with 2 teaspoons of sugar or a squeeze of honey.
#2 Add your favourite fruit to personalise your cocktail.
#3 With a Mojito you can switch the soda water with ginger ale for extra zing.
#4 Chill your glasses in the freezer for a few minutes before making your cocktail.

Pimm's no1 and Lemonade Cocktail

A refreshing summer cocktail - Pimms no 1 and lemondae cocktail

Ingredients

  • 50 ml Pimm's No. 1®
  • 100 ml lemonade
  • Ice
  • 1 orange slice
  • 1 cucumber slice
  • 1 strawberry slices
  • 1 mint sprig

Instructions

  • Mix Pimm's No. 1® and lemonade together in a jug. Chopsticks make really good stirrers here.
  • Pour into a glass filled with ice and garnish with the fruits and mint.
