These grilled fish tacos take me back to warm Sierra Leonean evenings, drinking cold ginger beer, piling guava salsa on grilled fish straight off the barbeque and catching up about this and that. Oh those days.
This guava and parma ham salad is one that I did back in the summer and then completely forgot about it. Luckily, I rediscovered it whilst archiving my food photographs. It is a salad recipe fitting for this time of the year – light, refreshing and easy to put together with hints of the exotic locations you would probably rather be in right now.

This mocktail is easy peasy. It is simply pure coconut water and guava juice. Nothing else. I like it as is. However you can play around with the amount of each juice you add in. And for an adult kick you could add in some rum – and serve to celebrate the Notting Hill Carnival which is just around the corner
