Folks, I finally made some Jollof spaghetti aka Jollof pasta. And it is so good that I am trying to convince my sister to serve some up at her wedding next year. Heck, we all know that it is no West African party if it has not got some Jollof rice in it somewhere right. So why not go over board and serve up some jollof pasta too.
These quick smoky grilled prawns work well as a starter along with some grilled tomatoes and cold white wine.
Waitrose Cellar set me the challenge of coming up with an unusual pairing of food and wine. It was obvious for me to pair their Alexandre Merlin Champagne with Sierra Leonean grilled prawns. And the crisp, fizzy, dry champagne perfectly complements the slight hint of heat in these prawns. Perfect for a summer day.
