It is made with affordable, easy and simple ingredients but when put together turn into an elegant side dish that the whole family will love. It also makes a great dish for entertaining guests.

Just think slightly crispy green beans, sweet sautéed shallots, garlicky nutty almonds all completed with an aromatic lemon butter sauce. All the good things, people, all the good finger licking things. I really do love this green beans and almond recipe.

What is Almondine?

Amandine, a classic French dish, also spelled Almondine in the US, is a dish that is garnished with sliced, slivered or whole toasted almonds. Basically you melt butter and then cook the almonds in this.

And in the case of this recipe it is green beans in a buttery lemon sauce with slivered almonds. Other ingredients that can be served as amandine included things like asparagus, broccoli, cauliflower and potatoes.

So if you are ready to make this recipe for Green Beans Almondine then gather your ingredients and let me walk you through this step by step.

Ingredients Notes

  • Fresh green beans (if using canned then 2 X 14.5oz cans)
  • Almonds
  • Butter
  • Shallots / green onions
  • Garlic
  • Lemon juice

How To Make Green Beans Almondine

  1. Bring a pot of salted water to a boil, then add the green beans and blanch for 4-5 minutes.
  2. Drain the water, transfer green beans to a bowl and set aside.
  3. Melt butter in a skillet over medium heat. Add in shallots and sauté for a couple of mins.
  4. Then add the almonds and garlic and cook for a further couple of mins, until fragrant.
  5. Switch off the heat and stir in the lemon juice and green beans till combined. Serve warm.

Make This With Canned Beans Instead

  1. Open can and drain beans and set aside.
  2. Melt butter in a skillet over medium heat. Add in shallots and sauté for a couple of mins.
  3. Then add the almonds and garlic and cook for a further minute, until fragrant.
  4. Add in the drained beans and cook for a couple of minutes.
  5. Switch off the heat and stir in the lemon juice. Serve warm

Green Bean Almondine Tips

  • It is great to use beans are slightly firm for this so they don’t disintegrate when mixing, but if you prefer softer beans then cook them for a little longer.
  • Mix the green beans gently so that they don’t break.
  • If you don’t have shallot on hand you can use green onions or some very finely chopped white onions.
  • You can trim your beans ahead of time as well as slice up your almonds ahead of time to cut down on the prep time. Or you can buy pre trimmed beans form the store.
  • Feel free to leave the tails on the beans when cooking.
  • You can easily add more butter, more shallots or more almonds to your taste.
  • You can use canned beans but I think this recipe works best with fresh green beans.

How Do You Cut French Style Green Beans

To prepare these, you would need to top and tail the beans.

Line up the stems in one direction and use your knife or hands to make it easier. Then cut all the stems off at one. The tips are tender so you can leave them on, but if you prefer then repeat with the tips too.

Is Green Beans Almondine Make Ahead?

You can totally make part of this almond green beans recipe ahead of time to make your life much easier.

Cook the green beans but for a minute less than you would normally do. Then immediately plunge them into an ice-cold bath bowl of water to stop the cooking process.  Drain them, very well and store in an air tight container in the fridge for a day or two.

Just before serving, make the buttered almond, then add in the pre-cooked green beans and cook until the beans are reheated through.
