Did I ever tell you that I have access to 4 freezers? Yeap, 4 whole freezers. Two are mine and 2 belong to Freddy’s parents. Living where I am and being a food blogger means that I am obsessed with making sure I don’t run out of anything, for when the need to cook THAT recipe hits me. How else will I get that frozen okra that I sooooo desperately need RIGHT NOW?
Another reason though is all about keeping that natural goodness of fresh food for longer. I tend to do things like pick a lot of the excess berries, squashes, peas etc in the summer and freeze them ready for use through out the year. And even after a few months of freezing, they still taste just as good as when they were picked.

So, it was with much excitement that I wandered through my local Iceland shop to check out their frozen range. Along with all the usual stuff they also had frozen fruits (hello smoothies…….), soups, bake from frozen bread, speciality fish like lobster tails and sea bass. And they had a range of speciality meats which included things like venison burgers, ostrich burgers and wild boar and apple sausages. Something for everyone. I was very surprised to find that they also stocked things like frozen kale, bean quinoa, mini corn cobs and asparagus sticks. I mean having asparagus on tap all year round is seriously awesome.
I sadly had to leave the shop but not without 5 plastic bags full of food including the burger buns, quick cook frozen peppers and my 6oz Wagyu beef burgers. And of course I ended up making these lush beef burgers with a chunky pepper mayonnaise.

Beef Burger With Chunky Pepper Mayonnaise #PowerofFrozen
- Decant the peppers into a small bowl, stir in the mayonnaise and set aside.
- To make the burgers pre heat the grill to high, toast the burgers buns for about 1 min and set aside.
- Reduce the grill setting to medium and grill the burgers for up to 5 mins on each side depending on how done you prefer them.
- Assemble your burger starting with the bun, chunky pepper mayonnaise, burger, rocket, shredded cabbage and bun.
