Honey Roasted Cashew Nuts
Roasted cashew nuts are one of those really easy snacks that I just can’t stop making. Spicy roasted cashew nuts for boy’s night, honey roasted cashews for film nights and various other roasted nut combinations that I will no doubt share with you later on.
I make so much of these that I regularly do a 6 hour round trip nut run to Brixton market. My last one was 2 weeks ago with 2.5 kg of cashews nuts, 1.5 kg of whole almonds and 750g of walnuts. And that is not counting the bag of shredded coconut, 6 plantains, okra, wonton wrappers and 12 limes. Let’s just say I am pretty good friends with some of the shop owners. Plus I get to eat rice and peas and curry from one of my favourite take away’s too. I miss you Brixton.
Now that I am all loaded up on nuts, I can just see that a significant part of my summer is going to involve roasted nuts, ice teas, vegan cheesecakes and nutty doughnuts. Bring it on.

Honey Roasted Cashew Nuts
Ingredients
- 2 tbsp honey
Instructions
- Preheat the oven to fan assisted 120C / 140C / 275F / gas 1 and lightly oil a lined baking tray.
- Mix all the ingredients together and spread out in a single layer on the tray.
- Roast for 20 mins turning half way through.
- Take nuts out of the oven, let them cool for 2 mins before scraping them off the tray on to a plate and allowing them to cool completely.
I got cashews I wanted to Honey roast, I saw your recipe, did all that reading, but when I got to recipe, the Ingredients was blocked out? Why ? You like to just tease people, not right.

I had to stop buying cashews in bulk as my obsession was getting out of hand lol. These sound delish, I nearly always roast off raw cashews before eating them, but how come I never thought of roasting them in honey?!

The only trouble with making batches of flavoured nuts is that I can’t stop eating them! So much for leaving them in a cupboard for when you get peckish, I tend to sit down and scoff the lot in one sitting!!!

Exactly Jane. I have to avoid making them to frequently for that very same reason.
I love cashew nuts and often make spicy roasted nuts. I also saw some growing in Grenada so I now understand why they are so expensive!

Jealous of your nut bulk buying. I find honey roasted cashews addictive, definitely my favourite nut, wouldn’t last long at all if I started making my own!

I have such a weakness for cashews. If you leave a pack near me, I find it hard to stop at ‘just a few’. And as for these honey roasted ones – I’d eat the lot for sure!

Love cashews and I’m envious of you being able to buy them in bulk like that. They are not only tasty but so useful for so many things. These nuts sound super delicious, which might be a bit of a problem 😉
Carrying them back can be a bit of a hassle but really worth it.

Wow that is a lot of nuts Bintu! I like the sound of food from the food market stalls at Brixton Bintu – reminder for me to make my way sooner than later!
