  • Orange Juice – Fresh-squeezed provides maximum flavor, but you can also use store-bought.
  • Olive Oil – or avocado oil – A small amount is all that’s needed.
  • Salt – brings out the flavor.
  • Dill – for serving, but feel free to use other herbs.

How To Make Roasted Beets in Air Fryer

Get the complete ingredients list and instructions from the recipe card below.

  1. Preheat air fryer to 400 degrees F / 200 degrees C, peel the beets, and chop them into bite-sized pieces / one-inch cubes.
  2. In a large bowl, toss beets with olive oil and orange juice and add seasoned beets in a single layer to the air fryer basket.
  3. Air fry beets for 16-18 minutes, shaking the basket a few times during cooking.
  4. Taste they are fork tender, adjust seasoning if needed, and add a sprinkle of dill if desired.

Roast In The Instant Pot Instead

You can do these in the Instant Pot instead. You won’t get the crispy effect, but you will still get good a result – so check out this Instant Pot Beets post.

Pro Tips 

  • Preheat the air fryer if recommended by your manufacturer. 
  • Make sure to wash your veggies well and remove any debris before cooking.
  • Wear gloves or peel the beets in a bowl of cold water to prevent staining your hands. 
  • Cut them into similar-sized pieces so they cook evenly. Also, make sure to shake the basket halfway through.
  • You can serve warm or cold.
  • Air Fryer temperatures vary depending on the make and model. Use the air fryer cooking time listed here as a guide. We recommend checking for doneness and adjusting as needed.

Delicious Variations

  • Use Different Kinds of Beets – Most of us are familiar with red beets, but you can also get golden beets and striped beets.
  • Add To Salads – Roasted beets are mighty tasty on top of a salad.
  • Add Chopped Nuts – Chopped and toasted walnuts add a nice crunch to these.
  • Herbs – Feel free to add extra herbs like chopped fresh parsley or cilantro.
  • Use Smoked Salt – Smoked salt adds a wonderful smoky flavor. 
  • Use Your Favorite Seasoning – Salt (and a little bit of dill) is all you really need, but you can experiment with different seasonings like garlic powder, salt and pepper, and red pepper flakes.
  • Cheese – If not vegan, top-cooked beets with goat cheese, crumbled feta cheese, or creamy cheeses go well with their natural sweetness.
  • Sweeten up – Add some honey or maple syrup, and then air fry them for a sweet twist.

Prep And Storage

  • Prep Ahead – These veggies can be peeled and chopped up to 3 days in advance. 
  • Store – Leftovers should be kept in an airtight container in the fridge. Use them within 4 days.
  • Freeze – Freezing cooked beets is possible, but it’s important to note that their texture might change slightly upon thawing. I don’t recommend freezing them for that reason.
  • Reheat – You can reheat leftover beets in a 350 degrees F / 176 degrees C oven for 10 minutes.

Do I Need To Peel Beets Before Or After Air Frying?

You can peel beets before or after air frying, based on your preference.

Peeling them before air frying makes them ready to eat right away while peeling after can be easier and helps retain moisture and nutrients during cooking.

Can I Roast Beets In The Oven?

Yes, you can roast beets in the oven. Follow the same recipe above, but spread the cubes onto a baking sheet. Roast for 30-40 minutes in a 400 degrees F / 200 degrees C oven.

How Do You Reheat Beets?

Reheat them in the air fryer for 2-3 minutes at 375 degrees F / 190 degrees C.

Can I Freeze Roasted Beets?

Yes, you can freeze roasted beets but freezing them is more of a personal decision. I find that they can sometimes be a little rubbery. If you decide to freeze, follow these instructions:
– Allow them to cool completely.
– Pour into a freezer-safe bag.
– Store in the freezer for up to three months.

Ingredients

  • 1 pound (453g) beets peeled and cut into one-inch pieces
  • 1 tablespoon olive oil
  • 1 tablespoon orange juice
  • salt to taste
  • dill fronds chopped

Instructions

  • Peel the beets and cut them into one-inch cubes.
  • Combine with the olive oil and orange juice in a mixing bowl.
  • Preheat the air fryer to 400 degrees F / 200 degress C.
  • Place beets in the air fryer basket and cook for16-18 minutes, shaking a couple of times.
