Roasting veggies is such a great way to amplify their sweetness and bring out their earthy flavors. I’ve always loved roasting potatoes and carrots, and now I loooooove roasted beets.
Until recently, my only experience with beets was pickled beets, and while they were okay, I didn’t love them. The beets felt slimy and the pickle was overpowering.

FAQs
I prefer to peel the beets unless I am roasting them whole.
Follow the same recipe above, but spread the beets onto a baking sheet. Roast for 30-40 minutes in a 400F / 200C oven.
Reheat beets in the air fryer for 2-3 minutes at 375F / 176C.
Freezing these beets is more of a personal decision. I find that they can sometimes be a little rubbery. If you decide to freeze, follow these instructions:
– Allow the roasted beets to cool completely.
– Pour into a freezer-safe bag.
– Store in the freezer for up to three months.
