Roasting veggies is such a great way to amplify their sweetness and bring out their earthy flavors. I’ve always loved roasting potatoes and carrots, and now I loooooove roasted beets.

Until recently, my only experience with beets was pickled version, and while they were okay, I didn’t love them. They felt slimy and the pickle was overpowering.

Roasted Beets In The Air Fryer

Enter Air Fryer Roasted Beets! If you think you don’t like beets, you really need to give this a try. Friends, Air Fryer Beets are so easy to make and super flavorful. Their sweet taste and earthy flavor make them the perfect side dish for dinner rotation.

These roasted beets in air fryer are seasoned with salt and a bit of orange juice for a hint of citrus flavor. Sprinkle them with dill for brightness and enjoy!

Ingredients Notes

  • Whole beets – this recipe uses fresh red beets.
  • Orange Juice – fresh-squeezed provides maximum flavor, but you can also use store-bought.
  • Olive Oil – or avocado oil – a small amount is all that’s needed.
  • Salt – brings out the flavor.
  • Dill – for serving, but feel free to use other herbs.

How To Make Roasted Beets in Air Fryer

  1. Preheat air fryer to 400 degrees F / 200 degrees C, peel the bets, and chop them into bite sized pieces / one-inch cubes.
  2. In a large bowl, toss beets with olive oil and orange juice and add seasoned beets in a single layer to the air fryer basket.
  3. air fry beets for 16-18 minutes, shaking the basket a few times during cooking, es.
  4. Taste, adjust seasoning if needed and add a sprinkle with dill, if desired.

Roast In The Instant Pot Instead.

You can do these in the Instant Pot instead. You wont get the crispy effect but you will still get good result – so check out this Instant Pot Beets post.

Pro Tips 

  • Preheat the air fryer if recommended by your manufacturer. 
    Make sure to wash your veggies well and remove and debris before cooking.
  • Wear gloves or peel the beets in a bowl of cold water to prevent staining your hands. 
  • Cut them into similar-sized pieces for so they cook evenly. Also make sure to at least shake basket halfway through.
  • You can serve warm or cold.
  • Air Fryer temperatures vary depending on the make and model. Use the air fryer cooking time listed here as a guide. We recommend checking for doneness ands adjust as needed.

Delicious Variations

  • Use Different Kinds of Beets – Most of us are familiar with red ones, but you can also get golden beets and striped beets.
  • Add To salads – Roasted beets are mighty tasty on top of a salad.
  • Add Chopped Nuts – Chopped and toasted walnuts add a nice crunch to these.
  • Herbs – feel free to add extra herbs like chopped fresh parsley or cilantro.
  • Use Smoked Salt – Smoked salt adds a wonderful smoky flavor. 
  • Use Your Favorite Seasoning – Salt (and a little bit of dill) is all you really need, but you can experiment with all sorts of different seasonings like garlic powder, salt and pepper, red pepper flakes etc. 
  • Cheese – if not vegan top cooked beets with goat cheese or crumbled feta cheese. or creamy cheeses go well with their natural sweetness.

Make Ahead And Storage

  • Prep Ahead – These veggies can be peeled and chopped up to 3 days in advance. 
  • Store – Leftovers should be kept in an airtight container in the fridge. Use them within 4 days.
  • Reheat – You can reheat leftover in a 350 degrees F / 176 degrees C oven for 10 minutes.

Do I Need To Peel Beets?

You don’t need to peel them. I prefer to peel them unless I am roasting them whole.

Can I Roast Beets In The Oven?

Follow the same recipe above, but spread the cubes onto a baking sheet. Roast for 30-40 minutes in a 400F / 200C oven.

How Do You Reheat Beets?

Reheat them in the air fryer for 2-3 minutes at 375 degrees F / 190 degrees C.

Can I Freeze Roasted Beets?

Freezing them is more of a personal decision. I find that they can sometimes be a little rubbery. If you decide to freeze, follow these instructions:
– Allow them to cool completely.
– Pour into a freezer-safe bag.
– Store in the freezer for up to three months. 

What Are Beets

They are a tasty root vegetable that are enjoyed all over the world. They are a low-calorie food that provides many health benefits. 

They’re chock full of important nutrients like manganese, folate, potassium and vitamins B2 and C. They are also especially rich in fiber, and known to have antioxidant properties that may help regulate blood pressure.

Serving Suggestions

I love root vegetables and all the beets adding these to grain bowls, salads or over pasta, whipping them into beet soup or beet hummus.

  • 1 pound (453g) beets peeled and cut into one-inch pieces
  • 1 tablespoon olive oil
  • 1 tablespoon orange juice
  • salt to taste
  • dill fronds, chopped


  • Peel the beets and cut them into one-inch cubes.
  • Combine with the olive oil and orange juice in a mixing bowl.
  • Preheat the air fryer to 400F / 200C.
  • Place beets in the air fryer basket and cook for16-18 minutes, shaking a couple of times.
  • Transfer to a plate, taste and adjust seasonings, then top with dill (if desired).
