I have a thing for tiny foods. Not only are they ridiculously cute, I am utterly convinced they taste better than their larger counterparts. A slice of blueberry pie is great, but a golden crunchy bite-sized Air Fryer Blueberry Hand Pie is sooooo much better. Who’s with me?

And the fact that I can make them using my beloved air fryer means I can enjoy scrumptious vanilla sugar fruity pastries in a fraction of the time baking a traditional pie requires.

And since this air fryer hand pie recipe is much healthier than frying them in tons of oil, it is a perfect kid-friendly breakfast or after-school snack. My mini chefs looooove helping me make these blueberry hand pies too. Getting to crimp the edges to seal the pies is their very favourite part.

What Are Hand Pies?

Hand pies, also known as turnovers, are a portable half-moon shaped pastry with either a savoury or sweet filling. They can be baked, fried or deep-fried and are served in many cafes, restaurants, and bakeries around the world.

How To Make Air Fryer Blueberry Hand Pies 

  1. Mix together the blueberries, sugar, lemon juice, and salt in a medium bowl.
  2. Roll out the piecrusts (or shortcrust pastry roll) and cut out 6-8 (4-inch) individual circles.
  3. Place about 1 tablespoon of the blueberry filling in the center of each circle.
  4. Moisten edges of dough with water, and fold the dough over the filling to form a half moon shape.
  5. Using a fork, gently crimp the edges of the pie crust together. Then cut three slits on the top of the hand pies.
  6. Spray the hand pies with cooking spray and sprinkle with vanilla sugar (if using).
  7. Preheat the air fryer to 350F / 180C.
  8. Place 3-4 hand pies in a single layer inside the air fryer basket.

How to Make Blueberry Hand Pies in the Oven

  1. Mix together blueberries, sugar, lemon juice, and salt in medium bowl and set aside.
  2. Roll out the pie crusts (or shortcrust pastry roll) and cut out into 6-8 (4-inch) circles.
  3. Place about 1 tablespoon of the blueberry filling in center of each circle.
  4. Moisten edges of dough with water and fold dough over the filling to form a half moon shape.
  5. Use a fork and gently crimp the edges of the pie crust together. Then cut three slits on the top of the hand pies.
  6. Spray the hand pies with cooking spray and sprinkle with vanilla sugar (if using).
  7. Preheat oven to fan assisted 180 C / 200C / 400F / gas 6.
  8. Transfer hand pies to a lined baking sheet.
  9. Bake in the preheated oven until the pies are golden brown and filling is bubbling 25 to 30 mins.

  • Since air fryer temperatures can vary depending on the make and model, this recipe includes a range of suggested cook times. I recommend starting with less time, checking for doneness, and then adding more time as needed.
  • For those with dietary restrictions, you can make these these bBlueberry Turnovers using prepared gluten free or vegan piecrust.

 

  • Vary the filling flavour by swapping the blueberries for raspberries or blackberries. Other delicious filling versions include finely-chopped apple and cinnamon, or chocolately Nutella and even cherry pie filling or apple pie filling.
  • Feel free to finish these pies with a simple sugar glaze.

Meal Prep And Prep Ahead

Cook up a big batch of these fruity pastries because they can be easily stored in the fridge  until you need it.

Prep Ahead – Make ahead and refrigerate for up to4 days in an airtight container. Make sure they are covered so they don’t absorb the aromas of the other items in the fridge.

Freeze – Yes, it is possible to prepare your hand pies in advance and then store in the freezer until you are ready to cook.

  • Freeze the hand pies in a single layer on a baking sheet right after shaping them and the steam vents cut.
  • Once frozen, you can transfer them into a ziplock bag, labelled and stored flat.
  •  To bake them straight from frozen you will need to allow for an additional cook time of anywhere from 5-10 minutes.

    I love hand pies, and making them in the air fryer it such a good idea. I bet they get nice and crispy.

    I LOVE hand pies, but don’t make it that often for some reason. And you can make it in an air fryer??? I need to get me an air fryer!!
