Expert Tips

  • Cut wedges to the same size and thickness so that they cook evenly.
  • Removing excess starch will help you to get the perfect french fry consistency. Soak the potatoes in ice cold water for 30-minutes before cooking to make these extra crispy.
  • Be sure to thoroughly pat dry your potatoes with a kitchen towel or paper towel otherwise they may not crisp up.
  • This recipe calls for ½ teaspoon of oil, but you can leave the oil out. Be sure to spray your basket with cooking spray according to your manufacturer’s instructions if you choose not to use oil.
  • Save time and leave the skins on! They taste great and hold lots of nutrients. If you have picky eaters, you can remove them and still prepare the recipe the same way.
  • Be sure to shake these during cooking so that they crispy up all over.

  • Swap your potato – Russet potatoes are our favorite, but you can use other Yukon gold and others as well. See our FAQs for more information.

Make Ahead and Storage

  • Make Ahead – Soaking your cut potatoes in cold water is one of the critical factors in getting the crispy potato wedges you love. You need to prep early enough that your potatoes can soak for at least thirty minutes. You can slice and soak the night before; just be sure to store the potatoes in the fridge. We don’t recommend soaking the potatoes for longer than 18-24 hours.
  • Store – Leftover potatoes can be stored in an airtight container the fridge and reheated in the air fryer for 2 minutes at 370F / 187C.
  • Freeze – To cook air fryer potato wedges from frozen, you may need to increase the cooking time to 20-25 minutes.

How Do I Cut Potatoes Into Wedges?

The easiest way to cut wedges is to cut the potato in half lengthwise. Next, cut each half in half until you have quarters. Turn each quarter cut side up and cut it down the middle into 2-3 wedges. Depending on the size of the tatoes, you should get 8-12 wedges.
