- Place potatoes on a cutting board, cut into wedges and soak them in a large bowl ice cold water for 30 minutes, then dry raw potato wedges and add to a bowl.
- Add olive oil and season potato wedges and mix until evenly coated.
- Preheat air fryer to 400 degrees F / 200 degrees C.
- Place wedges in the air fryer basket and air fry for 15-18 minutes shaking several times during air frying.
Air Fryers temperatures can vary based on the make and model, so it cooking time may take some adjusting to get the timing just right. I recommend starting off with less time and then adding more time if needed to get to your preferred level of doneness.

- Removing excess starch will help you to get the perfect french fry consistency. Soak the potatoes in ice cold water for 30-minutes before cooking to make these extra crispy.

- Make Ahead – Soaking your cut potatoes in cold water is one of the critical factors in getting the crispy potato wedges you love. You need to prep early enough that your potatoes can soak for at least thirty minutes. You can slice and soak the night before; just be sure to store the potatoes in the fridge. We don’t recommend soaking the potatoes for longer than 18-24 hours.
- Store – Leftover potatoes can be stored in an airtight container the fridge and reheated in the air fryer for 2 minutes at 370F / 187C.
- Freeze – To cook air fryer potato wedges from frozen, you may need to increase the cooking time to 20-25 minutes.
How Do I Cut Potatoes Into Wedges?
The easiest way to cut wedges is to cut the potato in half lengthwise. Next, cut each half in half until you have quarters. Turn each quarter cut side up and cut it down the middle into 2-3 wedges. Depending on the size of the tatoes, you should get 8-12 wedges.

These air fryer potatoes are certainly healthier than traditional fried wedges since they are only cooked with minimal oil and are lower in calories and fat. Skillet or deep fried versions use much more oil.
Russet potatoes are the best choice for making potato wedges in air fryer. You will get a crunchy exterior and a tender interior. You can try yellow or red potatoes, but the finished product may not have the same texture you know and love. If you use sweet potatoes, you may need to cook them a bit longer.
This will help remove the excess starch from the potatoes which means you will end up with really crispy potatoes. w Soak the potatoes in ice water for 30-minutes before cooking.

Ingredients
- 4 medium potatoes
- 1 teaspoon seasoning of choice such as Italian seasoning, paprika, garlic powder
- ½ teaspoon oil
- salt to taste

- Scrub potatoes, cut into wedges (about 8-10 per potato) and add to ice cold water for about 30 minutes to remove excess starch. Then dry the wesdges and place in a bowl or ziploc bag.
