  • Baking powder – to make these muffins light and fluffy.

  • Milk – feel free to use whole milk, skim milk, or the plant-based milk of your choice.
  • Oil – any light, neutral-flavored oil works.
  • Egg – one large egg, or if you prefer, you can use an egg substitute.
  • Vanilla extract – for that perfect bakery flavor.
  • Raspberries – use fresh raspberries or defrosted frozen berries.
  • Vanilla cane sugar – the secret to creating a delicious crunchy top.

How To Make Raspberry Air Fryer Muffins

Get the complete ingredients list and instructions from the recipe card below. 

  1. Place a paper muffin liner inside each cup of a muffin tray.
  2. In a large mixing bowl, mix the flour, baking powder and salt.
  3. In a separate bowl, whisk together the oil, milk, egg, vanilla, and sugar until well combined.
  4. Add the wet ingredients to the dry and mix until just combined, then gently fold in the raspberries so they don’t break.
  5. Divide the muffin batter into the muffin cups, then top with vanilla cane sugar.
  6. Place in the air fryer basket and bake for 12 -15 minutes or until a skewer inserted into a muffin comes out clean.
  7. Allow the muffins to cool slightly in the baking tray before transferring them to a rack to cool completely.

How To Make Raspberry Muffins in the Oven

  1. Preheat the oven to 375 degrees F / 190 degrees C / fan assisted 170 degrees C / gas mark 5
  2. Place a paper muffin liner inside each cup of a muffin tray.
  3. In a large bowl, mix the flour, baking powder and salt.
  4. In a separate bowl, whisk together the oil, milk, egg, vanilla and sugar until well combined.
  5. Add the wet ingredients to the dry and mix until just combined, then gently fold in the raspberries so they don’t break.
  6. Divide the muffin batter into the muffin cups, top with vanilla sugar then bake for 17- 22 minutes or until a skewer inserted into a muffin comes out clean.
  7. Allow the muffins to cool slightly in the baking tray before transferring them to a rack to cool completely.

Ingredients

  • 1 cup (137g) flour
  • 1 teaspoon baking powder
  • ½ teaspoon orange zest
  • teaspoon salt
  • 2 ½ tablespoons (40ml) vegetable oil
  • cup (50g) sugar
  • cup (90ml) milk
  • 1 egg
  • ½ teaspoon vanilla extract
  • ½ cup (80g) raspberries
  • ½ tablespoon raw vanilla sugar for sprinkling on top

Instructions

Raspberry Muffins – Air Fryer Method

  • Place a paper muffin liner inside each cup of a muffin tray.
  • In a large bowl, mix the flour, baking powder and salt.
