What Is Antipasto?
Antipasto is a traditional appetizer served at the start of an Italian meal. The definition of antipasto is “before the meal”. It is designed to stimulate your appetite.
Antipastos can vary but generally include a variety of cured meats like prosciutto, salami, and mortadella. For the cheese fans, cheeses such as mozzarella or provolone are used. Marinated vegetables like artichokes, roasted peppers, and olives are included. Other inclusions may be bruschetta or crostini, nuts, and seafood like anchovies or shrimp.
Why Make This Antipasto Skewers Recipe
Easy to eat – The traditional antipasto food is placed on a skewer making it the perfect appetizer. Bye, bye additional washing up on forks and knives after a long event.
Make it ahead of time – I am all about making things ahead of time and this starter works so well. Just make sure you have enough fridge space for the platter you use.
Customize it to your occasion – You can use whatever ingredients you like. I like to mix and match it up according to the occasion. For Christmas I will focus on more red, green, and white, and on other occasions like summer I will add some seasonal fruits.

- Pepperoncini – Chopped into large cubes.

- Vegetables and accompaniments – Cherry tomatoes, olives, and cucumber slices.
- Dressing – Herb vinaigrette or balsamic glaze.

How To Make Antipasto Skewers
- Thread the skewers in the following order: cucumber, olives, sliced cheese, cherry tomato, salami, Fontina cheese, and pepperoncini.
- Once all skewers are assembled, drizzle them with the herb vinaigrette or balsamic glaze.
- Arrange the antipasto skewers on a platter. Place it in the refrigerator to chill. Serve and enjoy!

- Be sure to use sturdy skewers or opt for metal skewers. The skewers need to handle the weight of what you have placed on it.
- Cut all the ingredients into bite sizes so it is easier for guests to eat.
- Use different colors, ingredients, and textures based on the occasion.
- Make the skewers ahead of time and keep them in the fridge covered in plastic wrap to maintain the freshness and so that the ingredients don’t dry out.
- Make sure you leave a gap on either side of the skewer so guests can easily take one.

- Prep ahead – These skewers are perfect for prepping in advance. Make them a few hours before your event and store them in the fridge. Cover them tightly with plastic wrap or store them in an airtight container to keep everything fresh.
- Store – Store any leftover skewers in an airtight container in the fridge for up to 2 days. So, if you’ve used softer cheeses like mozzarella, eat them sooner as they may dry out or lose their freshness more quickly.
- Freeze – These skewers are not freezer-friendly.

For a traditional antipasto platter or skewers, you’ll want to include a variety of cold meats. Like prosciutto, salami, mortadella and capicola (or coppa). You can, however, customize it according to your favorite cold meats.
2 ounces per person is the recommendation for a traditional antipasto. A good rule of thumb for these skewers is to plan for 2 to 3 antipasto skewers per person if you’re serving them as an appetizer. If your skewers are smaller or other appetizers are available, 2 per person should be fine.
