Spanish for ‘rice with milk’, Arroz Con Leche is the Latin version of rice pudding. And peeps, I looooooove rice pudding. It is absolutely one of my favourite desserts.
Rice is already one of my desert island takes. And rice pudding is rice only creamier and sweeter, so all the better.
My partner on the other hand is not much of a fan. But I am working on him. And this recipe for Instant Pot Arroz Con Leche just might help me get a little closer to winning him over.
The Instant Pot makes easy work of so many recipes, and Mexican Arroz Con Leche is definitely one of them. Making it on the stovetop can be laborious and time-consuming, but this is pretty much a dump and start recipe.
Just toss all of the ingredients into your Instant Pot except for the condensed milk, which you simply stir in after the cook time is complete. Soooooo easy.

How To Make Instant Pot Rice Pudding

- Add the ingredients from rinsed rice to nutmeg into the Instant pot insert.
- Cover, set vent to sealing position and then press the porridge function. This setting automatically cooks for 20 minutes.
- When finished cooking, Allow for a NPR (natural release) for 10 minutes and then perform a quick release remaining pressure (QPR) to release the remaining pressure.
- Open the lid and add sweetened condensed milk until well combined.
- Serve warm or cold with cinnamon sprinkled on top.
Tips for Making Instant Pot Arroz Con Leche
- Rinsing the rice before cooking is not mandatory, but it will result in a silkier texture.
- This recipe is vegan, but you can easily adapt it to be non-vegan by using regular whole milk and regular condensed milk. Other dairy milks work too. Skim milk will not be creamy enough so use the higher fat content for a creamier pudding if you can.
- Enjoy it as dessert, or why not have it for breakfast as I love to do. It is suuuuuch a delicious way to start the day.
- You can easily double the batch as long as the ingredients fit below the fill line of the Instant Pot insert.

However, I used Basmati rice for this recipe (since that is what I had on hand) and the results were amaaaaaazing.
Other types of rice like medium grain rice etc are well suited for making this include Arborio rice, Jasmine, brown rice, and even Japanese sushi rice or Thai sticky rice.
But be aware that changing the rice will most likely result in you having the change the liquid ratio.
In a word: both! One of best things about this easy rice pudding is it’s equally delicious served hot or cold.

This is so good! I found sweetened condensed coconut milk at Whoe Foods.
I used white Basmati rice with freshly ground cardamom and it was so good! Made my own non-dairy condensed milk using canned coconut milk and honey. Super easy, will definitely be making this again.

There is coconut condensed milk that is non dairy, there are also recipes online to make your own non-dairy sweetened condensed milk.. It is super thick and sweet, so it is not the same as regular canned coconut milk.
