  • Rinsing the rice before cooking is not mandatory, but it will result in a silkier texture.
  • This recipe is vegan, but you can easily adapt it to be non-vegan by using regular whole milk and regular condensed milk. Other dairy milks work too. Skim milk will not be creamy enough so use the higher fat content for a creamier pudding if you can.

How to Customise Mexican Rice Pudding

Mexican Arroz con Leche is such a great dish because it is almost endlessly customisable. You can enjoy it in its most simple form, or go all out with various flavourings and all sorts of toppings.

I suggest trying different variations to see what works best for the different taste preferences of you and your family. Here are some suggestions on how to customise your Arroz Con Leche:

  • Many of the traditional cooked Mexican Arroz Con Leche recipes include raisins. But for a fun variation, try swapping the raisins for dried cranberries or blueberries. Or go for a dried fruit mixture.
  • To really change up the flavour, stir in chocolate sauce, peanut butter or dulce de leche. Stir in some evaporated milk too.
  • Topping it with fresh fruit and berries is also delightful. Serve with slices of apple, mango, pear or strawberries and zested lemon peel. I love topping with golden raisins.
  • Shredded coconut gives it a fun tropical flavour.
  • Chopped nuts provide nice texture and crunch and give your rice pudding some added protein.
  • Brown sugar adds crunch and flavor.
  • You can change up the spices by swapping the cinnamon for cardamom, or adding ground ginger and cloves, which is especially lovely for serving at Christmas.
  • Adding some fresh lemon zest or orange zest provides a bright and fresh citrus flavour.

FAQs

What Type of Rice is Best for Making Pressure Cooker Rice Pudding?

Latin Arroz Con Leche is typically made using short grain white rice because the higher starch content results in an extra creamy texture. The most common variety used for this dish is referred to as Bomba or Valencia rice.

However, I used Basmati rice for this recipe (since that is what I had on hand) and the results were amaaaaaazing.

Other types of rice like medium grain rice etc are well suited for making this include Arborio rice, Jasmine, brown rice, and even Japanese sushi rice or Thai sticky rice.

But be aware that changing the rice will most likely result in you having the change the liquid ratio.

Is Arroz Con Leche Served Hot or Cold?

In a word: both! One of best things about this easy rice pudding is it’s equally delicious served hot or cold.

During the frigid winter, serving up a warm and comforting bowl is just the thing. But if it’s hot outside, there is nothing better than a refreshingly chilled Arroz Con Leche to cool you off.

What Is Arroz Con Leche?

This is essentially rice with milk, which can be a dessert, cream snack or a fun breakfast. Various places have their own version of it with spices and sweeteners, but rice and milk are the main things.

Storage

Storage – Keep cooled treat in an airtight container inside the fridge for up to 4 days, or up to 3 months in the freezer.

  1. I used white Basmati rice with freshly ground cardamom and it was so good! Made my own non-dairy condensed milk using canned coconut milk and honey. Super easy, will definitely be making this again.

  2. What is “non dairy sweet and condensed milk?” Would a can of coconut milk work?
    Thank you!

    1. There is coconut condensed milk that is non dairy, there are also recipes online to make your own non-dairy sweetened condensed milk.. It is super thick and sweet, so it is not the same as regular canned coconut milk.
