Have you ever had a last minute holiday that worked out absolutely perfectly?
I decided at the very last minute that the kiddoes and I should join Freddy on his work trip to Oxford. You know to give the kiddoes a chance to hang with their cousins and have one last big hurrah before school starts.
So off we went, in such a disorganised fashion that we actually left behind essentials such as out toothpaste, sun cream and Slush the little wolf (peeps, the kiddoes named him). Anyway our days were filled with a room full of children all sleeping on top of each other, cycling, playground moment in the rain (it is the UK after all), big Indian meals in the dying sunlight, kids screaming higher higher form the direction of the swings, and hours lost in the Natural History museum and following the mouse trail in the Pitt Rivers Museum.
But one of my absolutely favourite moments of all was going punting. I had never been before and the pleasure we all had, laying in the sun as we peacefully glided down the Thames, feet and hands trailing in the water, to our very peaceful picnic spot. Then having a huge summer picnic in the dapple shade before punting back. We all agreed that we should go punting every single summer.
Luckily for us, the gorgeous summer weather continued when we got back home. Which meant more summer eats, such as this super colourful bacon and tomato tart. It is one of the less time cooking and more time having fun recipes. Just check out the video below to see how easy it is to make.

Quick Bacon Tomato Tart { Recipe Video}
Ingredients
- 1 tsp olive oil
- 4 slices unsmoked bacon diced
- 1 puff pastry sheet thawed
- 2 tbsp pesto
- 100 g (3.5oz) cherry tomatoes halved
- 125 g (4.4oz) baby mozzarella
To Serve
- Pesto
- A handful of rocket arugula
Instructions
- Preheat the oven to fan-assisted 170C / 190C / 375F / gas 5 and line a baking tray.
- Heat the oil in a frying pan and fry the bacon pieces until they are done and set aside.
- Lay the puff pastry sheet on the baking tray and score a 1cm border round the edge taking care not to cut all the way through.
- Spread on the pesto, before toping with the bacon, tomatoes and finally the mozzarella.
- Bake for 20 mins, until the pasty is puffed round the edges and golden.
- Serve with extra pesto drizzled and rocket leaves on top.
- Serves 6 with a side salad.
Tomato is very nice to eat ,but with this recipe become more amazing
