Try this bacon, cheese and chocolate bruschetta as a delicious starter for any occasion.
Oh Easter. Which means a whole lot of fun. It means Freddy’s rather eccentric family are going to be descending upon on us. It means cousins playing, Barbie and Lego moments, sleep overs, long walks, afternoons spent at the seaside, muddy boots, lost gloves, Easter hares (German influence – they appear to have an Easter Hare, rather than a rabbit), bonfires, bicycle rides and lots and lots of tractor rides.
All of which will invariably end with everyone pilling in to the house, throwing themselves down in front of the fire and needing food. And I will be ready with these bacon, cheese and chocolate bruschettas, all topped with a gazillion strawberries.
Yes, a slightly crazy combination. But it totally works. Melted brie and bacon is a pairing that is already familiar to you right? Well these flavours are enhanced by the drizzle of melted dark chocolate and sweetness from the strawberries. Guys this is good. I am a food blogger. I know these things. And so do the children – they eat this sort of thing, and for fussy children like mine, well…..
Oh and that bacon. I think I have a bacon addiction. Actually I KNOW I have a bacon addiction. As do the kiddoes. This means that we go through a whole lotta bacon a whole lot. Sweet bacon, smoky bacon, streaky and back. We really now know our bacon. And I’ve actually heard Freddy refuse stuff that is not good enough.
So when we came across the spoiltpig bacon, and tasted it, and it went through the judgement of the children, we knew we were onto a good thing.

Anyway bring on Easter, so that I can serve these bacon, cheese and chocolate bruschetta’s. Maybe as a starter in front of the fire. Maybe as dessert. Maybe as both.

- 1 pack spoiltpig dry cured unsmoked back bacon
- 1 tsp olive oil
- 1 baguette sliced
- 260 g (9oz) mild brie sliced
- A small punnet of strawberries hulled and sliced
- 60 g (2oz) dark chocolate melted
- Remove the rind from the bacon and cut into small pieces
- Heat the olive oil in a frying pan and fry the bacon for about 3 mins or until done to your liking. Remove from the heat and set aside in a warm place.
- Preheat the grill to high and toast the bread on one side.
- Turn the bread over, top with the brie slices, return to the grill and heat until the cheese is melted and bubbling.
- Transfer bread to a serving plate and quickly top with the bacon, strawberry slices and a drizzle of melted chocolate.
