  2. In a separate bowl, whisk together the large eggs, milk, vanilla, ground nutmeg, and a pinch of salt. Once combined, pour this egg mixture over the brioche in the prepared baking dish.
  3. Cover the French toast casserole and let it rest for about 30 minutes, allowing the bread to absorb the milky mixture. You can prepare this ahead and store it in the fridge for up to a day.
  4. Preheat your oven to 350 degrees F / 180 degrees C. Then, bake the French toast casserole for approximately 35 minutes.

Ingredients

  • 10 brioche rolls cut into bite-sized pieces
  • 5 eggs large
  • 3 cups (xxg) milk
  • 1 teaspoon vanilla extract
  • ¼ teaspoon nutmeg ground
  • 1 pinch salt
  • 4 bananas
  • ¼ cup (xxg) cashews
  • 2 tablespoons maple syrup
  • 1 tablespoon Brown sugar

Instructions

  • Lightly oil a 9×13 baking dish and spread the brioche pieces evenly across the prepared dish.
  • Whisk together the eggs, milk, vanilla, nutmeg, and salt and pour over the brioche.
  • Cover and allow to rest until bread has absorbed the milk mixture for 30 minutes. You can keep this for up to a day in the fridge.
  • Preheat the oven to 350 degrees F / 180 degrees C and bake the casserole for 35 minutes.
  • Just before the 35 minutes are up, peel and slice the bananas and add them to a bowl. Mix them with the cashew nuts and maple syrup.
  • Remove the brioche casserole from the oven, and sprinkle on the maple-coated banana slices and cashews before topping with brown sugar.
  • Return to the oven and bake for an additional 10 minutes, or until the bananas and cashews are caramelized.

    I made this for my family and it was a big hit, everyone loved the banana and cashew combination. I cheated a bit though: pressed for time I did a shorter soak but broke up the brioche into very small pieces. It all worked out great though, and I’ll deffo bake it again 🙂
