These Cinnamon and Allspice Baked Tomatoes are one of the easiest summer eats I make.

What is great is the fact that you need only 5 pantry ingredients and 5 mins of prep to whip up these roasted tomatoes. But the real magic is the fact that they can be served as a side dish, an appetizer or even as the main dish

Seriously, there is nothing better than biting into some warm bread, wrapped round the spiced tomatoes, as the juices run down your arms. In fact the kiddoes relish the chance to get as messy as they can eating these. Or is that just me?

How To Make Baked Tomatoes

This is one of the easiest tomato recipes you will ever make.

  • Combine all the ingredients in a bowl and taking care not bash the tomatoes and mix gently.
  • Add tomatoes to an oven tray and bake for 1.5 hrs or until tomatoes are caramelised along the edges.

Why Roast Tomatoes?

Roasting tomatoes is one of the easiest ways to use up tomatoes that are about to pass their prime. It is also a way to add flavour to a batch of tasteless tomatoes as caramelizing them removed the water an intensifies their flavour. Plus they do taste great roasted.

Tips For Making Roast Tomatoes

  • Use any large tomatoes that you like.
  • I like slow roasted them but you can speed up the process by increasing the oven temperature.
  • Feel free to swap spice (and herbs) to your taste – I have used caraway seeds, garlic, rosemary, and thyme depending on what I am serving them with.

Baked Whole Tomatoes

You can bake whole tomatoes in the oven too. You will not get that caramelising that you get with cut tomato edges and you may need to cook them a little longer.

Baked Tomatoes With Balsamic Vinegar

To make baked tomatoes with balsamic vinegar, simply omit the spices and drizzle on some balsamic vinegar instead. It is that simple.

Baked Tomatoes With Breadcrumbs

Another great idea is to make baked tomatoes with breadcrumbs. Season the tomatoes and add them to the baking tray, then sprinkle on the breadcrumbs and drizzle on a little bit more oil and bake. Just remember that they will no longer be gluten-free.

Ingredients

  • 2 tbsp olive oil
  • 1/2 tsp ground allspice
  • 1/2 tsp ground cinnamon
  • 1/2 tsp Sweetener (or sugar if not Paleo/Whole 30) Optional
  • Salt
  • 8 large tomatoes halved

Instructions

  • Preheat oven to fan assisted 140C / 160C / 325F / gas 3.
  • Combine oil, spices, sugar and salt in a bowl, add the tomatoes and mix gently.
  • Add tomatoes to cast iron baking dish and bake for 1.5 hrs or until tomatoes are caramelised along the edges.
  • Serve with some salads and corn tortillas for mopping up the juices.

    I never thought of roasting tomatoes with these flavors. It’s genius! I’m about to have so many tomatoes that I will never be able to eat in time, so this is a perfect use for them!

    This is my kind of recipe, simple, just a few ingredients…ok, I maybe didn’t expect the long baking time of 90 minutes…but anyway the unique combination of cinnamon with tomatoes is something I can’t wait to try on my own. Pinned!
