Easy Falafel Recipe - falafels on a table with a dip

I am so excited to share this Easy Falafel Recipe with Ramps (Wild Garlic) with you. Because I have been waiting rather impatiently for the arrival of ramps season. Impatient as in dragging poor old Freddy to the woods to check the for wild garlic, even though he was CERTAIN we needed to wait for a further few weeks.

Sooooooo excited, that when I found the first patch just peeking through the soil, I actually drew a map to make sure I knew exactly where to start looking the following week. Thing is, Freddy and I actually planted said wild garlic in the woods a few years ago and I am pretty proud that we now have an entire bed of it in the spring as and when I need. Oh the joy.

Yeap it is all about the ramps falafels right now.

Easy Falafel Recipe - falafels and salad in a bowl

What is Ramp (Wild Garlic)?

Here, we call this foodie delight Ramps  (I hear there is even a ramps festival in New York.) But it is also called wild garlic in the uk.  Some people call them wild leeks or wild onions. Whatever you call it, this yummy treat is like a flavour mixture of garlic and onion.

Why all the wild garlic/ramps/whatever you want to call it love? Well because they’re rather scarce because they are wild grown. (And there are people like me mapping out their exact locations in the woods so we can eat all of them.)

Reason Make Easy Falafel Recipe With Ramps

  • They are pretty easy to make with pantry staples.
  • They are filled with ramps (wild garlic). Yeah – that makes them pretty much perfect already.
  • They are vegan and gluten-free – yeap only chickpea and almonds, no flour in these little beauties.
  • They can be made ahead and quickly warmed up as needed – time-saving or what?
  • And the spices in these are pretty much adaptable – add tastes that you like and as much as you like.
  • You can simply omit the wild garlic if you don’t have any or prefer not to use it.

Falafel Recipe Baked Or Fried

Is it better to bake or fry falafel? Well, it is up to you. You can fry them if you prefer. But baking them make into a Healthy Falafel Recipe. Even more perfect, right?

Easy Falafel Recipe

So this Easy Falafel Recipe is just that – easy and simple. It is made with just 10 ingredients (although you can add extra spices or flavour to your taste) and is mostly made in a food processor. The actual making time is very very short.

  1. Step 1. Whiz chickpeas, ramps (wild garlic if using) and onion into a food processor until coarsely ground.
  2. Step 2. Then add the oil and pulse until finely chopped but not mushy.
  3. Step 3. Transfer the falafel mixture to a bowl and add in all the rest of the ingredients and mix well, adjust seasoning and refrigerate for 1 hour.
  4. Step 4. Wet your hands and roll about 2 tbsp of the falafel into a small ball and transfer to the baking tray. Repeat with the rest of the mixture until all done.
  5. Step 5. Spray the falafels with some olive oil and bake for about 25 mins until golden brown and done.

So, goodbye boring lunches or questions about what to do with wild garlic, or even how can I make falafels. This method is foolproof. Honest, it works every single time to give you falafels that are full of flavour and tender on the inside and golden and crunchy on the outside. Yes, every single time.

These look so incredibly tasty! There’s a wild garlic patch near where I live; I’ll have to go raid it so I can make this recipe!

Such a great recipe, love that these are baked, rather than fried too! And I love wild garlic, but sadly, this year, I can’t find any anywhere around where we live! I think I will go for a walk in the forest again today, because after seeing this recipe, I’m really desperate to find some! looks delicious!

Oh wow, I am also obsessed with wild garlic!! Always on the lookout for it in farmers markets! This is a genius recipe. I have been looking for a great falafel recipe for my toddler who loves extra flavorful foods. This is the one. Next time I find a batch of wild garlic, I’ll be back to print off the recipe.

Oh wow these look so good! I’ve had ramps (or wild garlic as you call it) once before– hmm now you got me thinking I should go rummaging through my woods to find some 🙂 or maybe my local farmer’s market but either way I want these and dip them in some hummus!

  6. Such a beautiful color! I have actually never tried wild garlic before. I love how you now have it easily available. These falafels sound perfect.

Why do I always want things I can’t have? Since moving to Italy it is near impossible to find wild garlic and I always miss it at this time of year! I love your falafel, such a creative way to use it.

  8. OMG I just want to jump through the screen of my Mac and go foraging with you! How lucky to have such wonderful seasonal wild garlic at your fingertips. I’m pretty sure we don’t have wild garlic or ramps here in Australia, would love to though.
