The weather over the last few weeks has been pretty gorgeous, right?  Which mean I have been firing up the BBQ and whipping little treats like this simple but summery Grilled Scallop And Balsamic Grilled Peach Salad.  Perfect for those days when you want to spend less time indoors and more time eating and having fun in the sun.

This salad is a packed full of flavours I love right now. Sour but sweet balsamic grilled peaches served with juicy yet simply seasoned grilled scallops, alongside some sweet yet tart raspberries and fiery rocket. And best of all, it is soooooooo easy to make.

Bonus is that this salad is colourful, full of easy everyday ingredients, is low in calories and just all round easy to make. Yeap, super eaaaaaaaaasy.

How To Make Balsamic Grilled Peach Salad With Grilled Scallops

  1. Fire up the barbeque or your grill.
  2. Rub some balsamic vinaigrette on the peach halves and grill for about 2 mins on each side.
  3. Then season the scallops and grill for 2-3 mins on each side.
  4. Assemble the salad and serve.

Don’t have any scallops then my not use some big juice shrimps instead?

You can easily swap out the peaches for some nectarines.

Grilled Scallop and Balsamic Grilled Peach Salad

Ingredients

  • 8 peaches halved and destoned
  • 20 scallops
  • Salt
  • Freshly ground black pepper
  • 160 g salad leaves
  • Handful of raspberries
  • Balsamic vinaigrette

Instructions

  • Fire up the barbeque until the coals are medium hot.
  • Rub some balsamic vinaigrette on the peach halves and grill for about 2 mins on each side.
  • Remove from the BBQ and set aside.
  • Then season the scallops with salt and pepper, grill on the bbq for 2-3 mins on each side before removing from the heat.
  • Assemble the salad with the salad leaves, raspberries, scallops, grilled peaches and a drizzle of balsamic vinaigrette before serving.

    First off… ALL that food looks so good. I would be in heaven eating there. This salad is so pretty. Love grilled fruit, and the combination of seafood is fantastic. This would be so nice for entertaining in the backyard with friends.

  8. Very jealouus of you being invited to the Waitrose event. I have been a Waitrose shopper for a while now and – in fact – even used to go in and treat myself to things from the reduced section when I was a student! You just can’t beat the quality. Back to this salad though I LOVE the idea of combining scallops and peach. I think it’s quite bold to mix seafood and fruit but imagine this works so well. Also are those daisies as a garnish?! I had no idea they were edible! I’ve got tonnes in the garden haha!

    I am very envious now, the farm looks fantastic. I love waterlily. I always shopped at Waitrose when I was in London as the quality of the food is way superior, especially the seafood. Love your scallop salad and with Waitrose scallops, you know that it will be delicious.
