These Balsamic Roasted Strawberries are tasty and sweet great for eating by themselves, on top of yogurt, waffles or in baked goods. Suitable for vegan and gluten free diets.

These roasted balsamic strawberries came with a whole load of drama.

I had this plan. Wake up at 5 am, make four recipes, style, photograph and edit them and pack everything away by 7.30 am before the kiddoes come downstairs for breakfast. And it all went smoothly and I was pretty chuffed to be on target at 6.30 am.

Then I set up the roasted strawberries, ran upstairs and reached into the cupboard and NO camera. This dufus food blogger had left her camera back in London.

Cue a whole load of stress, loads of early morning panic phone calls, a bit of driving (and inevitable getting lost due to the panic), swimming lesson, a children’s birthday party etc, before I managed to borrow a camera and finish taking the photographs at 4 pm. Only 9 hours after I expected.

Afterwards I sat down and ate every single balsamic roasted strawberry you see in that picture. Straight out of the jar in very big mouthfuls. They were worth every single bit of stress.

How To Make Roasted Strawberries

  • Preheat oven and lightly oil a lined baking tray.
  • Mix balsamic vinegar, olive oil, maple syrup and strawberries together and spread them out on the baking tray.
  • Roast strawberries for approximately 30 minutes (for still soft and juice berries) to 45 minutes (for more dehydrated, darker and intense flavoured strawberries) and the juice is nice and thick.
  • After they have cooled down carefully remove the strawberries into a bowl and set aside.

Oven Roasted Strawberries Tips

  • Try and make sure all the berries are the same size so they cook evenly.
  • If your strawberries are small you would only need to halve them.
  • If you use a large baking tray with plenty of space then your strawberries will dry out more.
  • Feel free to add more maple syrup or balsamic vinegar to your taste.
  • You could scrape out some vanilla from a vanilla bean to add to this.

How To Store Roasted Strawberries

Allow the strawberries to cool down, then simply scoop them and the juices into a jar, cover and refrigerate for 4 days.

Ok first thing is that you can pretty much scoop the balsamic strawberries out of the baking sheet and eat as is. However you can also serve them with the treats below:

What To Do With Roasted Strawberries

These roasted berries are absolutely fantastic when added to baked goods. You can add them to into strawberry muffins, lemon blueberry cake (instead of the blueberries) and much much more. Have fun experimenting with them and finding your favourite ways to enjoy them. Currently, I am making a habit out of swirling these delectable balsamic strawberries into my morning yogurt. Sooooo good!

Roasted Strawberries And Rhubarb

If you prefer to make roasted strawberries and rhubarb, then simply add in some rhubarb and increase the maple syrup amount to your taste.

Roasted Balsamic Strawberries

Here is how to make balsamic roasted strawberries.

Ingredients

  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1 tbsp pure maple syrup
  • 400 g (14oz) strawberries hulled and quartered

Instructions

  • Preheat the oven to fan assisted 160C / 180C / 350F / gas 4 and lightly oil a lined baking tray.
  • Mix all the ingredients for the balsamic strawberries together and spread them out on the baking tray.
  • Roast strawberries for approximately 30 mins (for still soft and juice berries) to 45 mins (for more dehydrated, darker and intense flavoured strawberries) and the juice is nice and thick.
  • After they have cooled down carefully remove the strawberries into a bowl and set aside.
