Simple Comfort Food Pasta
This comforting dish is made with pantry staples or ingredients you get from your grocery store, with minimal prep, and can be easily scaled to feed a crowd or for weekly meal prep.
And like my other fave lemon butter salmon pasta, it is delicious, cozy and yet light enough to serve all year round. Adding in leftover turkey or chicken makes it more substantial. In fact, I love whipping this up just so I can use those Christmas and Thanksgiving leftovers. Any excuse friends, any excuse.
Ingredients You’ll Need
- Uncooked pasta – Pretty much use your favorite pasta. It all works.
- Boursin cheese – I am biased towards the garlic and herb version. I mix and match what flavor I use when I get the Costo variety packs of this.
- Grape tomatoes – While I tend to use grape tomatoes, cherry tomatoes work well too.
- Flavoring – Add extra flavoring with olive oil.
- Leftover cooked white meat – I tend to use leftover chicken or turkey meat cubed into bite-sized pieces. Extra leftovers can be used in this cranberry chicken salad.
- Reserved pasta water – This starchy water helps thin out the creamy pasta sauce while also adding in tons of flavor.

Step 1. Preheat the oven to 375 degrees F / 190 degrees C / gas mark 5. Add the tomatoes to a baking dish, top with the two rounds of Boursin cheese and drizzle on the olive oil. Bake for 25-30 minutes or until the tomatoes are tender and burst.
Step 2. Meanwhile, bring a pot of salted water to a boil and cook pasta according to the package instructions. When done, set aside ¾ cup of the starchy pasta water before draining.
Step 3. About 5 minutes before the tomatoes and cheese are done roasting, add in the meat pieces to warm through.
Step 4. When the tomato cheese mix is done baking, remove from the oven and mix in cooked pasta and ½ cup of reserved pasta water. Feel free to add more water until you get your desired sauce consistency.
Bintu’s Tips And Notes
- If you have time, take the Boursin cheese out of your refrigerator about 30 minutes before cooking. This softens it up, making it easier to melt.
- Save the paste water – Many times I have mistakenly drained all the pasta water without saving any. It will still taste good with plain water, but friend, it tastes sooo much better with pasta water.
- Vary the meat – I interchange cooked chicken or cooked turkey meat in this. Use some air fryer chicken breast or air fryer turkey breast or even some crockpot whole chicken shredded up.
- Vegetarian version – Just use some cooked mushrooms instead of meat.
- Add greens – Mix in some spinach and fresh herbs like basil for even more yumness.
- Add more seasoning – I love adding in other things like red pepper flakes, jalapeños, Italian seasoning, garlic and onion powder. My fave addition is some lemon zest.
- Adjust sauce – Thin out the sauce by adding extra pasta water. If you find it too thin, you can thicken it with some grated Parmesan cheese.
- Scale it up – You can easily mix in 14-16 ounces of pasta. No need to add extra cheese, just add in an extra 3-4 ounces of tomatoes, some more olive oil, and reserve a little bit more pasta water for mixing.
- Make it cheesier – Oooooooh any excuse to add in some Parmesan in.
Storage
- Prep Ahead – Add the tomatoes, cheese, olive oil, salt and pepper into the baking dish and refrigerate.
- Store – keep in an airtight container in the fridge for up to 4 days. If you keep back some of the pasta water you can use that to loosen the pasta up.
