- Ground Turkey – I use ground turkey to keep things on the healthier side but feel free to swap it for Italian sausage (mild or hot, depending on your preference) or ground beef.

- Rice – Uncooked short-grain white rice.
- Broth – You can use chicken broth or beef broth.
- Onions & Carrots – Add flavor and color.
- Diced Tomatoes – Use crushed tomatoes instead if you prefer.
- Tomato Paste – I find the kind in a tube (like Alessi’s) is better.
- Seasonings – This recipe calls for bay leaves, Italian seasoning, paprika, Worcestershire sauce, plus salt & pepper.

How To Make Cabbage Roll Soup

- In a large Dutch oven, heat 2 tablespoons of olive oil over medium heat.
- Add the ground turkey and brown, breaking it up with a wooden spatula.
- Season with salt and pepper, then stir in diced onion, garlic, carrots, paprika and Italian seasoning. Cook for a few more minutes until the vegetables start to soften.
- Add the tomato paste and cook until it begins to caramelize.
- Pour in a half cup of the broth to deglaze the pot, scraping up any brown bits from the bottom. Then add the remaining ingredients and stir well to combine.
- Bring the soup to a boil, then reduce the heat and let it simmer for 35 minutes, or until the rice is tender and the cabbage has softened.
- Remove and discard the bay leaf before serving.

Bintu’s Tips
- If you want to use brown rice in this recipe, I recommend parboiling it first, as it will take longer to cook than white rice.
- I prefer larger chunks of cabbage in this soup for texture, but you can slice the cabbage into longer, thinner strips instead.
- You can easily double this recipe for meal prep or when you need to feed a crowd.
- Feel free to add more veggies – bell pepper and mushrooms are great additions.
- Like it hot? Add some red pepper flakes or a dash of your favorite hot sauce.
- Try serving topped with a dollop of sour cream or Greek yogurt.

Ingredients
- 2 tablespoons olive oil
- 2 pounds (907g) ground turkey
- 5 cups (445g) cabbage, roughly chopped about 1 smaller cabbage head
- 1 teaspoon salt
- black pepper to taste
- 2 bay leaves
- ¼ cups (46g) uncooked rice rinsed
- 1 cup (150g) diced onion
- ¾ cup (150g) carrots sliced into half-moons
- 5 cups (1.18L) broth beef or chicken
- 1 teaspoon Italian seasoning
- 14 ½ ounces (411g) canned diced tomatoes or crushed tomatoes
- 1 tablespoon Worcestershire sauce
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- chopped parsley for garnish
Instructions
- Heat oil in a large 4-quart Dutch oven over medium heat.
