Introducing you to my orange and shaved cauliflower salad with an orange tahini dressing. I love love love the soft crunchiness of the cauliflower along with the walnuts. And if like me you have pomegranate seeds as a pantry staple, you would add them to everything including this salad right?
What I like about this is that it is quick, easy, gluten free and low on carbs. So whenever I over indulge I fall back to eating this cauliflower rice for a few days with whatever left over’s I have in the fridge and everything is all right with the world again.
This cauliflower couscous is lighter on the carbs, vegan and gluten free and tastes pretty close to the real couscous. The subtle flavour of cauliflower means this is a nice base for all those herbs and grilled vegetables that we will be having over the summer months.
