It’s almost Easter, so we deserve chocolate cookies with a triple chocolate hit. I am talking big fat gorgeous smelling cookies made with lovely melted chocolate, boosted with some cocoa powder and all finished with some chocolate chips. These deserve a large collective yummmmm, right?
These delicate cardamom, cranberry and pistachio biscuits are not too sweet, thanks to the low sugar content and the addition of the fleur de sel, which helps the cardamom flavour to shine through; whilst the crumbly biscuit melts in your mouth, there is the fruity-sweet tang and chewiness from the dried cranberries and a crunch from the outer layer of ground pistachio.
This apple butter is soooooooooo easy to make and the slow cooker (crock pot) does all the work for you. You just have to wait in your divine smelling kitchen for THAT moment when you can pretty much scoop the butter straight onto a warm crumbly scone. Or straight into your mouth.
I am hoping it snows this winter. That way I can recreate some of my favourite winter memories for my mini chef. The dressing up in endless layers to go outdoors, having snowball fights, sledging across the fields and making ‘mine are bigger than yours’ bonfires. Then coming back indoors with that tingly feeling and settling down in front of the fire with a mug of luxurious velvety hot chocolate.
