So it is that time of the year again. That time when I spend quite a lot of time in my head. You know that place where it is all hot, sunny, sandy beaches, blue waters, fruits, cocktails and all that good, good food.
So let’s just take a moment to really appreciate these roast salmon polenta bowls. I mean it is roast salmon on polenta with sweet roasted tomatoes and a big helping of basil pesto. Big flavours people, big, big flavours. It is the kind of goodbye summer, hello autumn creamy comforting polenta.
There is comfort food and then there is COMFORT food. And these orange mushrooms served over orange flavoured polenta is definitely in the COMFORT food category.
Recently I have been trying to introduce new cheese dishes into our diet to shake up things a little bit. Starting with this cheesy polenta, topped simply with maple balsamic roasted beetroot. And honestly, this is one of my favourite new dishes as it is so simple yet the flavours blend together very well.
