I have been rather lacking on the rice recipes on the blog. I mean I am a Sierra Leonean who absolutely loves rice. So much so that I very often have ‘col res’ for breakfast.
I love making these cute mini baked plantain frittatas with the kiddoes. They are quick and easy to make and simply involve whisking eggs along with leftover plantains, chives and spring onion before baking them. For a grown up version add in some chilli sauce.
This year I want to incorporate okra into the Sierra Leonean inspired Christmas menu. My first recipe is this roasted sweet potato and okra salad with a bite from the spring onions and chilli and a tart lime salad dressing. This is my base salad recipe but I will add different veggies, meats etc to it depending on what we have going on the day.
This Sierra Leonean flavours meal is a super easy smoked mackerel, broccoli and plantain stir-fry. The sweet plantain really worked well with the salty smoked mackerel and the broccoli carries both flavours well.
