This guava and parma ham salad is one that I did back in the summer and then completely forgot about it. Luckily, I rediscovered it whilst archiving my food photographs. It is a salad recipe fitting for this time of the year – light, refreshing and easy to put together with hints of the exotic locations you would probably rather be in right now.
This year I want to incorporate okra into the Sierra Leonean inspired Christmas menu. My first recipe is this roasted sweet potato and okra salad with a bite from the spring onions and chilli and a tart lime salad dressing. This is my base salad recipe but I will add different veggies, meats etc to it depending on what we have going on the day.
In Sierra Leone, we call this chilli cucumber salad – gron soup. It is simply cucumbers marinated in lime, chilli and onions – and is as refreshing as it sounds. A summer go to salad.
Come Christmas, a feast is prepared across all homes in Sierra Leone. The centre piece dish of jollof rice is made even tastier by a sweet oniony stew. The roast chicken and roasted pork ribs are accompanied by warm fried plantains, sweet potato, meat patties, coleslaw and delicious peanut gravy. Next are the heaped piles of cassava and yams to help mop up the steaming bowls of pepper soup.
