Chicken Plantain Sandwich - Sierra Leone Flavours
Ingredients
- 1 plantain
- Salt
- Oil for frying
- 2 sandwich rolls
- 4 slices of cooked chicken breast
Instructions
- Peel the plantain, cut into slices and salt them.
- Heat the oil in a frying pan and fry plantain slices for about 2-3 mins on each side until golden brown and cooked through. You might need to do this in two batches. Set cooked plantain pieces aside on kitchen towel and store in a warm place.
- Create the sandwiches by layering the rolls starting first with some plantain, then the chicken, then the peanut butter gravy.
