Guava Coconut Mocktail – Sierra Leone Flavours

Coconut Cocktail @ Recipes From A Pantry

Since my last recipe post was all about the spiced apple cocktail I figured I should also share one of my virgin ‘cocktails’. You need lots of mocktail recipes in your life, right?

I have been trying to remember how many guava trees we had in the last place I lived in Sierra Leone. I certainly remember three at the front of the house. And I definitely remember watching the guavas grow (seemingly slowly to my rather anxious palate), then when they got big enough there was also that wait for them to ripen and to get at least one of them before everyone else did. Then it was off to grind the guava to a pulp, sieve it and add it to that coconut. Oh the joys of growing up in Sierra Leone.

This mocktail is easy peasy. It is simply pure coconut water and guava juice. Nothing else. I like it as is. However you can play around with the amount of each juice that you add as well as add in some sugar syrup for a sweeter drink. And for an adult kick you could add in some rum – and serve to celebrate the Notting Hill Carnival which is just around the corner. Sky is the limit.

Now please test this and tell me how you like yours.
