Cardamom, Almond and Courgette Soup {Vegan, Paleo}
Cardamom, Almond and Courgette Soup is a delightful courgette soup recipe that is delicate, fragrant, and perfect for summer.
Raise your hand if you’re a courgette (or Zucchini, if you prefer) fan.
I most definitely have my hand raised. Actually both hands — that’s how much I love courgettes. I grow them at home in our veg garden so I can have access to fresh, beautiful courgettes in the summer whenever I please.
The harvest was good this year. Of the 10 courgettes we planted, 9 are still alive. We very graciously let the slugs get one.
And yes, I am that obsessed. Yes, I check them every single day. I adore courgettes. Although, I don’t think I should scare you off this blog by telling you how much time I spend hanging out in courgette forums. I got the pickling, the freezing, the stuffing, the grilling and every single thing you can do a courgettes ideas down to a T through chatting to very helpful courgette loving folks.

And this spiced courgette soup one of my favourite things. Various incarnations of this courgette soup get made when courgette season is in full swing. What goes in depends on what is growing in the kitchen gardens or what is available locally.
Cardamom, Almond and Courgette Soup has spring onions, onion, and courgettes and it is spiced up by almonds and cardamom. It is fragrant and silky creamy from both the courgettes and almond milk also making it a dairy free recipe, vegan recipe, and Paleo recipe.
As water is one of the main ingredients in this delicately flavoured spiced courgette soup, I tend to use filtered water which is free of all of the unwanted ‘extras’ that can be found lurking in water. The resulting softer, cleaner water really allows the delicate flavours of all the other ingredients to really shine through. Brings this soup to a whole other level.

Cardamom, Almond and Courgette Soup
Ingredients
- 2 tbsp olive oil
- 1.4 kg courgette zucchini with skin on sliced thinly
- 4 onions thinly sliced
- 4 spring onions sliced
- 4 garlic cloves thinly sliced
- 1400 ml filtered water
- Ground black pepper
- 8 tbsp ground almonds
- 1-2 tsp ground cardamom to taste
- 100 ml almond milk or single cream if not vegan
- Salt
Instructions
- Heat up the oil in a soup pot and add in the courgettes, onions, spring onions and garlic and sauté for about 10 mins until they are soft.
- Then add in the water and black pepper and simmer for 10 mins.
- Remove the soup from the heat and stir in the ground almonds, cardamom and milk.
- Let the soup cool and then puree with a hand held blender.
- Add in some salt to taste and then warm the soup through gently and serve with some fresh crusty bread.

This soup is such a great way to use courgettes and onions from my allotment. Have you got any unusual ideas for broad beans or runners? Also redcurrants… I need help!
Broad bean risotto or broad bean hummus are pretty quick and easy.

One of the reasons I enjoy courgettes is that they offer clean creaminess without the inclusion of unhealthy stuff and they taste even better with onions, as you show. I havent ever added cardomon and will give it a go now. your pic is lovely too x

I’m a big fan of the courgette too. I usually plant two or three each year and get enough without too much of a glut. But this year I just haven’t had time to plant any, it will pain me to buy my courgettes but I might just have to get some to try your lovely soup.
