As well as this being one of my favourite okra recipes, Crispy Roasted Okra is snacking made sexy – trust me.
Why Serve Crispy Roasted Okra?
Roasted okra (also known as lady fingers or gumbo) will make a unique addition to all the lovely barbeques you are (most definitely) going to be hosting this summer. You might even get quiet Quentin and shy Susan bonding over this side dish.
Yeap, Crispy Roasted Okra is a special dish. Before you start thinking ‘I don’t like okra, okra is slimy’… not with this dish. Roasted okra is not slimy as long as you prepare it the way I show you in this post.
I had different flavours of this baked okra growing up in Sierra Leone. Actually it was more like grilled okra but the end result was the same. Perfect finger food that we all just kept dipping into the garlicky chilli sauce. Divine.
How do you cook roasted okra without the slime?
No need to worry about the slime that okra is so famous for. You eliminate this by not cutting into the bit with the seeds. Just a quick trim on the stalk ends of the okra then pop into the oven to roast.
Then you grab the crunchy crispy roasted okra straight out of the oven, dip it into some delicious sauce and just well – enjoy.
What are the benefits of eating roasted okra?
I’m glad you asked. First, Crispy Roasted Okra is naturally:
- Gluten-free
- Vegan
- Keto friendly
- Paleo friendly
- Whole 30 friendly
A serving of Crispy Roasted Okra contains only 9g net carbs (carbs – fibre). Besides being good for these diets, okra is also loaded with nutrients. Okra is beneficial because:
- It’s full of fibre (good for digestion).
- It’s high in Vitamin C (good for the immune system).
- It’s high in Vitamin A (good for the skin and eye health).
- It’s high in potassium (good for blood pressure).
I think this means we should all be eating lots and lots of Crispy Roasted Okra.
How to Make Crispy Roasted Okra — Step by Step
Step 1. Preheat oven to fan 180C / 200C / 400F / gas 6.Mix all the ingredients together making sure the okra is well coated.
Step 2. Add the okra to a baking tray making sure the pieces are not touching each other.
Step 3. Bake for 20-25 mins (turn them once during baking).
Step 4. Whilst the okra is baking mix together the ingredients for the dipping sauce till well combined and set aside.
Step 5. Remove the okra from the oven when crunchy and serve warm or cold with the dipping sauce.
What do I serve with Roasted Okra?
Dipping sauce, of course… but what about your mains? Since this is a great barbeque recipe, it goes well with other barbeque recipes like Ginger Beer Pulled Pork – African Recipe (Gluten-free) and Herb Loaded Beef Burgers {Gluten-free}.

Crispy Roasted Okra
Ingredients
Crispy okra:
- 450 g (1 lb) trimmed okra
- 1 tbsp vegetable oil
- Salt
- Chilli flakes
Garlic chilli mayonnaise dipping sauce:
- 4 tbsp garlic mayonnaise
- 2 tbsp sweet chilli sauce
Instructions
- Preheat oven to fan 180C / 200C / 400F / gas 6.

Okra is quite popular in Greece, Bintu, but I’m afraid it’s the slimy version that I’ve taken quite taken to. Really like the idea of baking it to a crisp, though, and dipping it in that lovely dip! Thanks for showing me that okra can be tasty!

I love Okra in stews and curries, but never tried it by itself, sounds lovely!
It has a lovely taste and you can dip it in anything.

You know, I have never had okra before. I keep meaning to buy some and making something with it (although I am not sure what), but I never get round to it. I am going to give your recipe a try.
Ottolenghi recommends a shop near edgeware road where you can get some if you are ever in central London.
I rarely cook with okra though I do like it and this is an interesting recipe with the Sierra Leonean slant.

Okra done right is awesome and this looks fantastic, Bintu. I love the added spice and garlic mayo for dipping – these would make the perfect snack. Or maybe starter to a comforting meal…

This sounds amazing! I am from the Southern U.S. where most of the time okra is fried. It is wonderful but I love trying different variations.
I love okra and cook it every week in Indian curries and stir fries. I do bake them once in a while but haven’t managed to get really crispy Ines. Will bookmark your recipe as a reference when I make baked crispy okra next time
