    Recipe Tips

    • This makes a lot of food! This recipe is made to feed a crowd. Take your Crockpot Egg Casserole on the go or freeze it for later.
    • Prep ahead: You can save time in the morning by preparing some of the ingredients the night before. Slice the sausages, chop the red pepper, and blanch the cauliflower in advance. Store them in separate airtight containers in the refrigerator.

    Delicious Variations

Feel free to get creative and tailor this casserole to your taste preferences and dietary needs. The possibilities are endless, making it a versatile dish for any occasion.

    • Vegetarian: Skip the sausages and make a vegetarian version. Add more vegetables like spinach, mushrooms, and diced tomatoes for a hearty veggie casserole.
    • Carby Addition: If you’re not on a low carb diet, add frozen hash browns instead of cauliflower.
    • Spicy Kick: For those who enjoy some heat, incorporate diced jalapeños or a dash of hot sauce into the egg mixture to make a spicy breakfast casserole.
    • Mexican Fiesta: Create a Mexican-inspired breakfast by adding ingredients like diced green chilies, black beans, corn, and a blend of Mexican cheeses. Top with salsa and serve with avocado slices.
    • Italian Twist: Make it Italian-style by using Italian sausage, sun-dried tomatoes, and mozzarella cheese. Add some basil leaves for a fragrant twist.
    • Ham and Cheese: Swap out sausages for diced ham and use Swiss or cheddar cheese for a classic combination.
    • Healthy Upgrade: Opt for a healthier version by using egg whites or a combination of whole eggs and egg whites. Load up on more veggies and reduce the cheese for a lower-calorie option.

    Prep And Storage

    • Make ahead – Assemble and refrigerate overnight before baking, or make this overnight before you head to bed. You’ll wake up to a warm and filling breakfast the next day. It’s a great way to end the night with a little extra family time with my mini chefs before bedtime.
    • Store – Store in an airtight container in the refrigerator for up to 3 days.
    • Freeze – Let cool completely and freeze in portions for up to 3 months.
    • Reheat – Heat it back up in the microwave in less than 2 minutes.

    Benefits of Slow Cooking

Using the slow cooker for breakfast is a great way to wake up in the morning before the morning rush of getting everyone out the door starts.

Using a crockpot isn’t beneficial to every cooking situation, but it’s an incredibly useful kitchen tool to own. Here’s why:

    • Tougher meats like chuck and less lean meats are tenderized during the longer cooking process.
    • More oven space. If you can create a dish in your crockpot, you’ll free up much needed oven space during holiday parties. A slow cooker also travels well! No need to fight over oven space at your potluck if you use a slow cooker.
    • Development of flavor. You’ll develop more flavors in your ingredients during the longer cooking time. All of those flavors of sausage, peppers and spices will develop while you’re sleeping.
    • Slow cookers use less energy and won’t heat up your home like an oven will. My slow cooker gets a lot of use in the summer when I just don’t want to turn the oven on.
    • Less dishes. Okay, the morning is not the time to make a bunch of dishes to start your day. Letting the crockpot do all that work overnight is enough for me to use the slow cooker.
