This crunchy veggie rainbow salad recipe is simple to make but full of vibrant colours and good flavors which are perfect for a picnic or barbeque.
I love eating colour. Seriously love it.
l just love how you can transform any meal to something special with the addition of little pops of colour. You know a few strawberries here, some pomegranate seeds there, some shredded red cabbage or matchsticked orange peppers, quartered cherry tomatoes or cubed avocado. Really easy right?
This crunchy vegetable rainbow salad is so so so simple but packs a big punch with great flavour and with it vibrant colours. Something that would liven up any meal and would make a fab centre piece for any picnics or barbeques.
I make this rainbow chopped salad a lot when the girls and I do our regular indoor picnics with our barbies, unicorns and teddy bear guests. Along with a few strategically placed pictures, a large yellow smiley sun cushion and some outdoor sounds music, we really feel like we are sunning it up at some fabulous picnic spot. I simply drizzle on some balsamic vinaigrette dressing and we are good to go. Leftover salad goes in the fridge to come back out in the evening alongside some pasta or fish. I also serve it a lot with hummus, courgette dips and flat breads when entertaining vegan friends. Ooh, all that raw crunchy goodness.

Crunchy Veggie Rainbow Salad
- 150 g (5.3oz) cucumber deseeded and cut into small cubed
- 150 g (5.3oz) rocket arugula
- 200 g (7oz) red cabbage finely shredded
- 1 orange pepper deseeded and finely chopped
- 1 red pepper deseeded and finely chopped
- 2 avocado peeled, stoned and cut into small cubes
- Handful of pomegranate seed
- Balsamic vinaigrette dressing
- Combine all salad ingredients, drizzle on the dressing and mix.
