- lemon juice – from about 2 lemons.
- rice wine vinegar – but I have use apple cider vinegar or white wine vinegar instead.
- Tamari soy sauce – or regular soy sauce if not gluten free.
- optional: maple syrup (but highly recommended as it balances out the tart flavors).
