Why You’ll Love Goodbye to Winter Slaw
Luckily this red cabbage, celeriac and apple slaw tastes good no matter what the weather is doing outside so you could call it what you want. Please just try it.
The yoghurt, lemon and sweet pickle mix make a healthier and equally delicious alternative dressing. So you and I have an excuse to eat bowls and bowls of this.
I must admit at this point that I sometimes get a little bit bored of cutting the celeriac into matchsticks so I put in less and it is fine. Sometimes I completely leave it out. Or, I ask OH rather nicely if he would do the honours and more often than not he does.
You know those cloying soggy coleslaws that put you off all slaws for life. Well, this is not one of them. Especially if you follow my tips below to keep your slaw crisp and fresh.
How to Make Winter Slaw
Shred the cabbage coarsely and cut both the apple and celeriac into matchsticks reduces the chance of this. Add only half the dressing and then slowly add one spoon at a time till you get the combination that you want.
By all means, if you want more dressing on then make up half a batch of dressing again and add it in slowly till you are happy. Prepare the vegetables just before needed and add in the dressing at the last minute.

Goodbye to winter slaw
- 300 mls natural yoghurt
- 2.5 tbsp lemon juice
- 3 tbsp Pataks Brinjal pickle or a sweet mango chutney
- 1 tsp olive oil optional
- 2 large carrots
- ½ small red cabbage about 350g roughly chopped
- 2 small spring onions
- 1 apple
- 1/3 small celeriac celery root, about 300g
- First prepare the dressing by adding all the ingredients in bowl and mixing until well combined.
- Prepare the vegetables by grating the carrots, chopping the cabbage and spring onion and julienne the apple and celeriac.
- Add the vegetables in to a large bowl and add in half the dressing and mix.
- Add the remaining dressing in a tbsp at a time and mix until it is right for you.
- Serve immediately.
