What is Almondine?
Amandine, a classic French dish, also spelled Almondine in the US, is a dish that is garnished with sliced, slivered or whole toasted almonds. Basically you melt butter and then cook the almonds in this.
And in the case of this green beans and almond recipe, think crisp-tender green beans in sweet sautéed shallots, garlicky nutty almonds in an aromatic lemon butter sauce. All the all the good finger licking things people. Other ingredients that can be served as amandine included things like asparagus, broccoli, cauliflower and potatoes.

- Scalable – This will feed about 4-5 people as a side, so I simply double or triple the recipe for a crowd. It really is that simple to scale it up.
Ingredients Notes
In this easy recipe, we’ll use green beans, almonds, butter and shallots into a delicious dish. Follow my tips on each ingredient for the best results.
- Green beans – I use fresh green beans, that have been topped and tailed. Grab them from the supermarket or your garden. Select the best beans and discard any that don’t look fresh. Feel free to leave the tails on the beans when cooking. If you prefer using canned then you want 2 X 14.5oz cans.
- Almonds – I prefer to use roughly chopped whole almonds for this but flakes work too. If using flakes then you would need less cook time. Hazelnuts and walnuts would work too.
- Butter – Salted butter is my preference, but you choose what works for you. To make this vegan, simply swap the butter for some olive oil.
- Shallots – I use finely sliced shallots as they cook quickly. If you don’t have shallots use some very finely chopped white onions (which will take longer to cook).
- Garlic – Freshly squeezed garlic works best.
- Lemon juice – I love the brightness and zest freshly squeezed lemon juice adds.
- Salt – for salting the boiling water to flavor the veggies. This is my fav salt.
How To Make Green Beans Almondine

- Bring a pot of salted water to a boil, then add green beans and blanch for 2-4 minutes or until they are crisp tender and slightly squeak when you bite into them.
- Drain and plunge them into an ice bath to stop the cooking process. Then drain again, transfer beans to a bowl and set aside.
- Melt butter in a skillet over medium heat. Add in shallots and sauté for 2 minutes.
- Then add the almonds and garlic and cook for a further couple of minutes, until fragrant.
- Switch off the heat and stir in the lemon juice and cooked beans till combined. Mix the beans gently so that they don’t break. Serve warm.

Make This With Canned Beans Instead
- Open the can and drain beans and set aside.
- Melt butter in a skillet over medium heat. Add in shallots and sauté for a couple of mins.
- Then add the almonds and garlic and cook for a further minute, until fragrant.
- Add in the drained beans and cook for a couple of minutes.
- Switch off the heat and stir in the lemon juice. Serve warm

I really love switching things up in the kitchen. Here are some tips for easier cooking and variations for you to try if you want something a little different.
- It is best to use al dente beans so they don’t disintegrate when mixing, but if you prefer softer beans then cook them for a little longer.
- You can easily add more butter, more shallots or more almonds to your taste.
- This recipe cooks very quickly, so make sure to read through and have everything to hand before you start cooking.
- Make sure to use salted water as this adds extra flavor to the beans. The water should really taste like salt water.
- One of my favorite extra additions is lemon zest.

Storage
Have any leftover? Lucky, lucky you.
- Prep ahead – You can trim your beans ahead of time as well as slice up your almonds ahead of time to cut down on the prep time. Or you can buy pre trimmed beans from the store. Boil the beans, but for a minute less than you would normally do. Then immediately plunge them into an ice-cold bath bowl of water to stop the cooking process. Drain them, very well and refrigerate in an air tight container for a day. Then follow the rest of the recipe when needed.
- Store – Refrigerate cooled cooked beans in an airtight container for up to 3 days.
- Reheat – for a couple of minutes in a preheated air fryer. You can also use a microwave but they will not be crispy.
FAQs
To prepare these, you would need to top and tail the beans. Line up the stems in one direction and use your knife or hands to make it easier. Then cut all the stems off at one. The tips are tender so you can leave them on, but if you prefer then repeat with the tips too.
