I love December. In all its crazy, hectic, fun-filled, shopping, cookie making, gift wrapping, Christmas tree decorating, jam-packed self. I look forward to it every year and would not change it for the world. But every now and then, I need a little moment to recharge. And at times like these, I turn to a Christmas grilled cheese sandwich that hits the spot everytime.
I love this one as it is pretty easy to make. The crunchy walnuts cooked with honey and orange zest pair well with the ooey goey warm Comté cheese. And when topped with the cranberry sauce, it just rocks. Heck this might just be my Christmas morning eat.
I must add here that I really do like Comté. There is something special about its creamy nutty flavour. Maybe it is the way it is made (it is seriously time-consuming, it takes up to 18 months to mature), or the specialist milk (only made with milk from two breeds of cows). Or maybe the fact that it is a purely natural making process, with no additives, and has been made in the same way for almost 1,000 years. It is good. And because it has been an AoC for more than 50 years, you know that when you get Comté, it is the real thing.
Nuff talk, now drop everything and make this grilled Comté cheese sandwich completed with orange and honey walnuts and cranberry sauce. And please do share your pictures with me on Instagram if you make it.
