Guys, this summer time grilled chicken, grilled sweet corn and grape salad with a lemony coriander yoghurt dressing came into existence because of an invite to a barbeque.

Seriously, I spent the better part of a week dreaming it up. Why so long? Because along with being a planner I sometimes carry the title of worrier too. Being know as that food blogger comes with the responsibility of turning up with good, perfectly presented, appealing to all kind of food. So I worried, and jotted down, then crossed out and jotted down more ideas till I finally settled on this one.

I went for this grilled chicken and grilled sweet corn salad with a lemony coriander yoghurt dressing because I wanted something that fit in with the barbeque scheme. Especially bearing in mind that with the propensity of the British weather to turn rainy, the actual bbq’ing bit might not happen. So I wanted guests to have a barbeque in a salad bowl.

The salad is a mixture fiery rocket along with tender chilli grilled chicken, plain grilled sweetcorn, tomatoes, grapes and avocadoes, all slathered with a lemon and coriander yoghurt dressing. This salad ended up being a tasty riot of flavours and colours.

A little tip – If you can, make sure to use very thin chicken breasts as the thinness means more flavour is absorbed as well as quicker grilling. You end up with 5-10 mins of grilling work for the absolutely perfectly cooked chicken.

A Summer Grilled Corn, Chicken And Grape Salad

A Summer grilled corn, chicken and grape salad with a coriander yoghurt dessing.

Ingredients

  • Olive oil
  • 2 large corn on the cob husks removed
  • 300 g (10.5oz) chicken breasts
  • 2 tbsp mild chilli sauce
  • 140 g (5oz) rocket arugula
  • 16 cherry tomatoes
  • 2 handfuls of grapes
  • 2 avocado sliced
  • Mild chilli optional
  • 2 spring onions chopped
  • 6 tbsp Greek yoghurt
  • 4-5 tbsp lemon juice
  • 1 tbsp olive oil
  • 2 tbsp finely chopped coriander cilantro

Instructions

  • Put the corn cobs in a pot of salted water and bring to the boil. Then simmer for about 10 mins until the corn is cooked.
  • Preheat the grill to medium high.
  • Brush the corn cobs with some olive oil and grill all sides of the corn until nicely roasted. Slice the corn of the cob and set aside.
  • Marinate the chicken breast in the chilli sauce for 5 mins then grill for a few mins on each side or until cooked through but not dry. Slice the chicken breast and set aside.
  • Assemble the salad with the rocket, tomatoes, grapes, avocadoes, chilli, spring onions, chicken and sweet corn.
  • Make the salad dressing by mixing together the yoghurt, lemon juice to taste, olive oil and coriander. Adjust seasoning and drizzle the dressing over the salad before serving.
