July 4th is fast approaching, and that means it’s time to fire up the grill! And while everyone is scrambling to snatch up all of the hot dogs, burger buns and potato chips from the local market, I have got a better idea.

Why not impress your guests with a unique spin on everyone’s favorite party fare? That’s right, I’m talking about tacos. Yeap, this Grilled Lamb Tacos Recipe is just the thing to make your 4th of July festivities truly memorable.

Tender, juicy grilled-to-perfection marinated lamb, wrapped  in warm tortillas and served with as many (or as few) toppings as you like. My personal fave way to enjoy these delectable lamb tacos is topping them with fresh mint-spiked sour cream and chipotle sauce. Sooooo incredibly good.

These delicious tacos are ideal for no-fuss summer entertaining because they are super easy to make and quite economical. So when you’ve got the whole gang over to celebrate, this is the meal that can easily satisfy a crowd without blowing your budget. You can serve this up for Taco Tuesday, taco night, and an anytime dinner the whole family will love.

Ingredient Notes

  •  Lamb – while most use ground lamb or shredded lamb, this recipe calls for lamb shoulder cut into bite sized pieces.
  • Oil – use olive oil or any vegetable oil you prefer.
  • Spices – this recipe gets its great taste and flavor from a combination of smoked paprika, cumin, oregano, chipotle paste (optional), minced garlic, salt and pepper,
  • Citrus – fresh lime juice or lemon juice lifts up the flavor.
  • Tortilla – use corn tortillas to keep this gluten free. Otherwise you can use wheat tortillas.
  • Serving suggestions – feels free to top with various toppings, including fresh cilantro. See options below.

How To Make Grilled Lamb Tacos

  1. In a large bowl, make a paste with the olive oil, smoked paprika, cumin, oregano, garlic puree, chipotle paste (if using), lime juice, salt and pepper.
  2. Add lamb and toss to coat all the pieces, and allow to marinate for 30 minutes or more. But if you’re short on time, go ahead and cook the lamb straight away.
  3. Preheat outdoor grill or barbecue with a flat plate to medium. Once hot, spray the plate and then add the lamb.
  4. Cover with an inverted pan or a dome-shaped lid so that it gets heat from all round and cooks evenly.
  5. Cook covered lamb for 5-7 minutes, then uncover, turn and cook for another 3-5 minutes. Total cook time will be 8-12 minutes, depending on the size of your cubes and how hot your grill is.

  • You can cook this indoors on a large skillet over medium heat on the stove top. Do drain off any excess fat before serving.

What Cut of Lamb is Best For Making Grilled Lamb Tacos?

There are many cuts of lamb that lend themselves to grilling. As lamb cuts are generally leaner and smaller than beef or pork grilling highlights out its superb tenderness.

While you can (and should) grill more expensive cuts of lamb, such as loin chops, rib chops and lamb shank, when marinating and grilling lamb for this lamb tacos recipe I recommend going with budget-friendly choices like shoulder chops, sirloin chops, and top round.

  • Shoulder Chops – This cut tends to be a a bit tougher and fattier than others, is is also more flavorful, economical, and quicker to cook.
  • Sirloin Chops – Large and meaty, a sirloin chop is an inexpensive cut of lamb taken from the leg and hip section.
  • Top Round – This is a thick and flavorful cut that comes from the large leg muscle. You can grill top round as a whole piece, or cut it into cubes.

    These are STUNNING! It’s funny because we make tacos all the time, but I don’t know why it never occurred to me to use lamb ~ yum!
