West African Recipe – This simple grilled pineapple smoothie adds an interesting twist to breakfast.
Grilled pineapple was one of my go to starters for our Sierra Leonean BBQ’s. Simple, quick, sweet and easy.
Family members realised this so would come back from numerous trips to the interior ‘up country’ laden with pineapples, bigger than my head and sweeter than you can ever imagine. So, I kind of had to keep hosting the bbq’s to get rid of the fruit. And because I kept hosting people kept bringing more fruit and so on. Left over grilled pineapple invariably ended up in fruit salads or breakfast drinks like this grilled pineapple smoothie. Fun times.
Freddy, after hearing that story for the 10th time, sweetly turned up with a couple of ripe pineapples for me to re-live my Sierra Leone moments which I am sharing with you on the blog today too.
Raising a grilled pineapple smoothie to the family and hoping to hang out with them very soon.
