Is there anything better than a healthy Turkey Salad, all dolled up with crunchy rainbow salad and completed with the creamiest tahini salad dressing you can whip up?

But yes. Because it is sooooooo easy to make, that it really should be a non-recipe recipe. But it is too good not to share and I am all about sharing the food love with you guys.

I just want to wax lyrical about this creamy tahini dressing. This dressing is super versatile and can be added to EVERYTHING. You can use it as a salad dressing, a dipping sauce, drizzle over some soup and stuff in a sandwich with tons of veggies or meat.
Or if you are like me, just scoop it out of the bowl and directly into my mouth.

How to Make Tahini Dressing
- Make the salad dressing by adding all the ingredients into a blender and blend till creamy.
- Then to bring your colourful Turkey Salad all together, Add half the salad dressing into the salad and toss. Taste and add more dressing as required.

- Feel free to use the shredding attachment of a food processor or use a mandolin to shred your veggies. This makes life much quicker.
- However, a sharp knife and a cutting board work just as well if a little longer.

Healthy Turkey Salad
Ingredients
- 1 pound (450g) turkey breast sliced
- 1/2 head red cabbage shredded
- 1/2 head white cabbage shredded
- 1 bell pepper de-seeded and finely sliced
- 1 large carrot cut into matchsticks
- 2 bell peppers de-seed and finely sliced
- 6 radishes finely sliced
- 1 cup bean sprouts
- 3 green onions (scallions/spring onions), finely sliced
- 4 tbsp chopped cilantro (fresh coriander)
- 3 tbsp toasted sesame seeds
- 3 tbsp toasted nuts optional
Tahini Dressing:
- 1/4 cup (120 ml) tahini
- 1/4 cup (120 ml) water (or more as needed)
- ¼ (60 ml) cup lemon juice
- 1 garlic clove minced
- Sweetener to taste or maple syrup if not low- carb
- Salt
- Black pepper
