Who does not like pancakes? Or should I start with how do you like your pancakes? In my kitchen, golden fluffy nutmeg or cinnamon flavoured american pancakes are certainly a breakfast and brunch favourite. Topped with fruit and cold ice cream they are pure heaven.
So as an edible Christmas gift why not quickly throw together a few batches of homemade pancake mix. Friends like having a mix on hand as this can be a life saver on a busy Christmas morning. It is very easy to make and uses ingredients that you already have in your pantry. You can easily adapt it with various spices and toppings and can also scale it up. In fact the hardest part is actually giving away the mix as a gift (trust me you are going to want to keep it for yourself).

Homemade american pancake mix
- 115 g (1 cup) of plain flour
- 1 tsp baking powder
- ¼ tsp sodium bicarbonate
- Pinch of salt
- Grated nutmeg or other spices
- 1-2 tbsp soft brown sugar optional
- Toppings eg chocolate chips optional
- Mix all the ingredients (except any toppings) together and pour into a container.
- If adding in toppings then layer them on the top.
- Decorate with ribbon and a gift tag.
- Add in the pancake recipe below.
160ml of milk
Butter for frying Pour pancake mix in bowl and add in the eggs and milk and whisk well.
Heat a non stick frying pan over medium heat. Melt some butter in frying pan and add in a ladle of batter.
Cook the pancake for about a minute and when the top starts bubbling (add toppings now if using) then turn over and cook the other side till it is golden. Makes 8-10 pancakes. Recipe adapted from Jamie Oilver.
