I have a friend who is gluten intolerant. And when she comes to stay, I have to either cut out a large bit of what I would normally serve, or try and adapt things to be gluten-free or get gluten-free products. And so far, I’ve found that it just isn’t the same with some of the gluten free things that I have tried. I have been on the hunt to find really good alternatives out there.
So I was rather pleased to hear rave reviews about the award-wining Delicious Alchemy. These guys make a range of gluten-free cake, brownie, oat and bread mixes. Great pantry staples to have along with their gluten-free oats, muesli and rice porridge. Plus their packaging is so appealing. The sort of company that makes catering for my friend, as well as my life, soooooo much easier.
So first stop was their gluten-free chocolate brownie mix. It was simply a matter of adding in a few wet ingredients and popping the batter in the oven. Being addicted to cashews, I had to throw in a few, but that was purely optional. Heck, I was so excited that I even made a video about it.
Gluten-Free Cashew Chocolate Brownies
I was so seriously impressed by how oeey gooey chocolaty the cashew chocolate brownies turned out. I had a hard time stopping myself after eating the first three. I talked myself into saving the rest for a brownie crumble type dessert I was serving for supper that night. Gorgeous, just gorgeous.
Then I tried their vanilla sponge cake mix. I rediscovered my love for passion fruit during our recent holiday in South Africa. So much so that I had to have passion fruit along with papaya, mango and a squeeze of lime for breakfast every day for three whole weeks.
So when thinking of a tropical cake to whip up for this Easter, I immediately thought of a lime and passion fruit cake. The cake came out lush, light and spongy and with the right cake texture. The only issue was whether I used all three of the passion fruit I’d bought on the cake or whether I saved one for breakfast the next day. The cake won.
I now have a rather handy stock of their awesome products in my pantry and will be using these very regularly. Not just as an option for gluten-free eating but just as my regular every day eats as well.

Gluten-Free Cashew Chocolate Brownies {Recipe Video}
Ingredients
- Delicious Alchemy gluten-free chocolate brownie mix
- 100 g (3.5oz) butter melted
- 2 large eggs beaten
- 55 g (2oz) lightly roasted cashew nuts roughly chopped
Instructions
- Preheat the oven to fan-assisted 160C / 180 C / 350F / gas 4 and line the sides and base as well as oil a 20cm (8 inch) square tin.
- In a large bowl combine the brownie mix and the butter until the mix starts to form a batter.
- Then mix in the eggs, followed by the cashews until well combined.
- Pour the brownie batter into the prepared tin and bake for 18-22 mins.
- When done, let cool in the tin for 20 mins before cooling completely on a wire rack.
- Slice and serve.

Lime and Passion Fruit Cake
Ingredients
- Lime and passion fruit cake
- Delicious alchemy gluten free vanilla sponge mix
- 180 g butter melted 6.3oz,
- 3 large eggs
- 1.5 tbsp water
- 2 tsp lime juice
- Zest of half a large lime
- Lime and passion fruit whipped cream
- 350 ml whipping cream 1.5 cups
- 1-2 tbsp icing sugar
- Zest of half a large lime
- Seeds from three passion fruit
Instructions
- Preheat the oven to fan-assisted 160C / 180C / 350F / gas 4 and line and lightly oil two 20cm (8 inch) cake tins.
- Make the cake. Add all the cake ingredients to a large mixing bowl and mix with an electric whisk for 15 secs. Stop, scrap the mix down and whisk again for another 10 secs.
- Dive the cake batter evenly between the cake tins and bake in the preheated oven for 20-25 mind until lightly golden brown and springy.
- Leave to cool in the cake tins for 5 mins before transferring to a wire rack and letting cool completely
- Make the whipped cream by mixing the cream, sugar and lime zest together in a large bowl and whipping till the cream forms soft peaks
- Then transfer one cake onto the serving tray and spread half of the whipped cream, and then half of the passion fruit seeds on top. Then place the second cake on top and spread the remaining whipped cream and decorate with the remaining passion fruit seeds and serve.

Oh my those do look good. It must be very hard generally for people on a gluten free diet to miss out on treats we take for granted. These mixes look ideal to make sure they don’t miss out.
