  • Ice Cream Sandwiches- you can use the classic chocolate and vanilla ice cream sandwiches or switch them out for other varieties.
  • Oreo Cookies- use Oreos or a similar type of sandwich cookies.
  • Cool Whip- grab the bigger tub of this classic whipped topping, or make your own.

How To Make An Ice Cream Sandwich Cake

  1. Set out a layer of parchment paper.
  2. Place 2 ice cream sandwiches on the parchment.
  3. Spread a thick layer of cool whip on top of the ice cream sandwiches, and then set 6 cookies on top of that. Finish with another layer of cool whip.
  4. Repeat the process two more times, finishing with a thicker layer of cool whip.
  5. Garnish with crushed oreo cookies.
  6. Place in the freezer overnight, then remove, slice, and serve.

Recipe Tips

  • Before assembling the cake, let the ice cream sandwiches soften just a little so you can press them down to create the layers and help form them into the pan. 
  • To make cutting slices of the cake easier, run your knife under hot water, wipe the knife dry and then slice your cake. 
  • Wiping your knife in between cuts of the cake will help it cut smoother. 
  • Don’t let it sit out any longer than 15 minutes before serving or it will start to melt and become runny. 
  • Thaw the Cool Whip in the fridge overnight before making the cake. Don’t thaw on the counter beforehand as it will become too runny. 
  • Use an offset spatula to help spread the Cool Whip on the sandwich layers. 
  • Crush the Oreo cookies in a ziplock bag and roll with a rolling pin on top.

  • Add sauces- add sauces toppings like caramel sauce, chocolate sauce, Nutella, coconut caramel sauce, Magic Shell, etc to the top of the cake.  
  • Change out ice cream sandwiches- They make various kinds of ice cream sandwiches, so grab various kinds at the store and try a few new ones. You could even make your own. 
  • Trade out the ice cream sandwiches– Get real creative and change out the sandwiches for something similar like Klondike bars or other frozen treats to take their place in this dessert. 
  • Add toppings- garnish with candies like M&M’s or add other chocolate candy bars that would freeze well like Kit Kats, Reese Cups, etc to the top of the cake and in between with the layers.
  • Vary up the Cool Whip- instead of just using plain Cool Whip, add a packet of Vanilla pudding mix and mix it into the Cool Whip and spread it out as usual. It adds an extra flavor to the cake that is just fantastic.

Storage

  • Store – Store covered up properly in foil and in a container for up to a month in the freezer. I will say it is BEST if enjoyed within a few days of being made. 
  • Thaw and Serve– Remove from the freezer for about 10-15 minutes before cutting and serving. Do not let it sit out any longer or sit in the refrigerator longer or it will become runny.
