I am crazily excited to be sharing this easy Instant Pot Breakfast Casserole with you. Because it is chucked full of breakfast goodness in one pot, but waaaaaaay easier than having to whip up a full fried breakfast.
And let’s face it, there is always room for one more easy breakfast recipe in our lives, right?

Low Carb Breakfast Casserole
Bonus, is the fact that this tasty bite is also a low carb breakfast, so aaaaaaaaaall the taste with none of the guilt. This recipe uses lower carb cauliflower and no need to boil the cauliflower florets first either.
The main ingredients are your everyday staples of eggs, milk, cheese, cauliflower, bell peppers and bacon. To these you add spices and seasoning to your taste and if you prefer green onions for a little extra punch.

- 8 qt Instant Pot.
- I use and love the 8 qt, extra Instant Pot Insert & sealing ring.
- 3 qt Instant Pot or 6 qt Instant Pot depending on family size.
- One of my favourite measuring jugs or cups.
- Measure out your spices with these measuring teaspoons.
- Sea Salt Flakes <= amazing salt that makes your food taste good.
- This sturdy baking pan helps to cook your food well.
- Bowls with covers.
- For storing your leftover food.
Ready to make Breakfast Casserole Instant Pot? Gather your ingredients and I’ll show you how….
How To Make Instant Pot Breakfast Casserole
- Mix together the eggs, milk, oregano, paprika and salt in a bowl.
- Lightly oil the cake pan and then layer the ingredients starting with the cauliflowers, red pepper, spring onions, bacon and cheddar cheese.
- Pour on the egg mixture, wrap the cake pan in aluminium foil and place cake pan on the trivet.
- Add the water into the Instant Pot insert and add in the trivet.
- Lock the lid, set to sealing, select manual (high pressure) and set time for 20 mins.
- Let cook until done, natural pressure release for 10 mins, then do a quick pressure release.
- Remove pan from Instant Pot, remove the foil and let cool in the pan for 10 mins. Then carefully invert, transfer to a wire cooling rack and let cool.

Recipe Tips
- Cooking times depend on your preference. If you like your eggs less less set then reduce the cook time by 3-4 mins. For more set eggs, cook for a further 3-4 mins.
- Swap spices to suit your taste. Italian Seasoning, chilli flakes, and mustard are all great substitutions.
- A tablespoon of aubergine pickle (eggplant pickle) adds a little extra punchy flavor to your breakfast.
- Feel free to use other shredded cheeses like Colby cheese or Monterey Jack.

Meal Prep and Storage
Prep ahead– You can prep the uncooked recipe ahead in the baking dish, cover and store in the refrigerator overnight. Simply remove and cook in the pressure cooker the next morning.
Store – Keep leftovers in an airtight container in the refrigerator for up to 3 days. Great for meal prep. Make sure to refrigerate within 2 hours.
Freeze – A tip is to divide the casserole into one person sized servings before freezing. So just pull out what you need
- Let it cool down then transfer into these very handy Ziploc freezer bags.
- Squeeze out all the extra air and seal the bags.
- Label the bags and then lay them flat in the freezer.
- Store in the freezer for 3 months.
- Thaw overnight in the refrigerator.
Reheat
- Cover and reheat till warmed through in an oven at 350F / 180C.
- For a faster reheat, you warm for a few minutes in the microwave.
Variations
This is where the fun part starts. You can try a different version of this Instant Pot Egg Casserole or need more ideas for meal prep. The easy answer is you can add almost anything you like, although some things may need to be pre-cooked first.

As far as cake pan size, use anything that will fit in your instant pot.
I’m sure you could make this with raw cauliflower, but I used frozen. So first I cooked the cauliflower and drained excess water.

I don’t understand Step 4. I thought the trivet was added in step 3. Two trivets?
Step 3 puts the pan with mixture onto the trivet ( at this point the trivet is not in the pot ) … step 4, after adding ( 1 cup? ) water to the Pot, move the trivet ( with the pan on the trivet — most trivets will have handles ) into the Pot.
