As you may know, I grew up cooking with my Gran and Aunt for my super-extended family. Holidays were always a special time, catching up with everyone and making memories in the kitchen. That’s exactly where my love for food truly began

Growing up, buttered cabbage was always on our Christmas menu. But over the years, I found that it could be hit or miss. Sometimes it was truly delectable, but then the next year, it would turn out rather soggy and wilting.

Why Make Cabbage in Instant Pot?

Good news for my fellow cooked cabbage lovers! After some tweaking and altering of the family buttered cabbage recipe, I have created what is truly the best Instant Pot Cabbage recipe around! And if you love cabbage recipes, then this is the dish for you!

Ingredient Notes

  • Broth – this recipe calls for chicken broth, but you can use vegetable broth.
  • Butter – I use unsalted butter, so if you prefer salted butter, then don’t add salt.
  • Chopped cabbage – a large head of green cabbage roughly chopped into 1-inch sections minimum.
  • Ground nutmeg – the secret ingredient that adds great flavor.
  • Seasoning – add kosher salt and fresh ground pepper to your taste.

How To Cook Instant Pot Cabbage

  1. Pour the stock into the Instant Pot insert and add the butter.
  2. Next, place the chopped cabbage inside the insert and make sure that it is below the fill line.
  3. Sprinkle nutmeg evenly over the buttered cabbage. Don’t just dump it in, as you don’t want it to clump.
  4. Cover your Instant Pot and turn the valve to the sealing position. Set to manual pressure / high pressure for 5 minutes.
  5. Pressure cook until done, then press cancel and quick release the remaining pressure.
  6. Open the lid, season with salt and ground black pepper, and gently stir until mixed together well. Serve warm.

Tips for Success

  • When adding your cabbage to the Instant Pot, make sure it does not go above the fill line. If it does, you may need to trim your cabbage more or reposition it inside the Instant Pot insert.
  • When pressure cooking cabbage, do not let the pressure release naturally. Be sure to perform a quick pressure release to avoid soggy, overcooked cabbage.
  • If you like more of a buttery taste to your Pressure Cooker Cabbage, feel free to add more butter to the recipe. I tend to go on the lighter side of things when creating recipes.
  • Serve with a slotted spoon if you don’t want any extra cooking liquid.
  • Turn leftovers into a quick easy cabbage soup using extra veggie broth and any other leftover cooked vegetables.
  • I have not tried this with red cabbage. If you have, please come back and tell me how you find it.
  • Cooking time listed does not include time for the Instant Pot to come up to pressure, or for the pressure to release.

Delicious Variations

  • Vary the spices – add herbs and spices like minced garlic, garlic powder, and ginger.
  • Add heat – using red pepper flakes, cayenne, and extra black pepper.
  • Add other vegetables – like baby carrots and cut-up baby potatoes that will cook quickly.
  • Make it a filling meal – by adding in cooked smoked sausage or cooked corned beef or chicken and serving with a side dish of potatoes or rice.

Buttered Cabbage Nutmeg Tip

Here is a great tip for how to season this with nutmeg. Sprinkle it evenly across all of the cabbage, to avoid it clumping together in one spot. Or, to make it even easier, try mixing the nutmeg into the stock before adding it to the Instant Pot.

When choosing your cabbage at the market, look for firm green cabbage and white cabbage. You want a firm cabbage choice, so the buttered cabbage doesn’t turn soggy or wilt. I recommend avoiding soft cabbages, like Savoy Cabbage, as they will overcook.

How Long To Cook Cabbage In Instant Pot So It Doesn’t Turn Out Soggy?

If you want firmer cabbage, reduce the cook time to 3-4 minutes. If you want slightly softer cabbage, you can increase the cooking time to 6-7 minutes.

How To Avoid Your Vegetable Turning Out Soggy?

When making your Instant Pot Cabbage, follow these tips to keep it from becoming wilted or turning too soggy:
– Cut cabbage into 1-inch chunks or slightly bigger to help them keep firm.
– Avoid choosing soft types of cabbage like Savoy Cabbage.
– Make sure you perform a Quick Pressure Release, and not a Natural Release.

Ingredients

Instant Pot Cabbage Ingredients:

  • 1 cup (236ml) chicken broth
  • 3 tablespoons unsalted butter
  • 1 large head of cabbage roughly chopped to 1-inch sections
  • ¼ teaspoon ground nutmeg
  • salt and pepper to taste

Instructions

Instant Pot Instructions:

  • Pour the stock into the Instant Pot insert and add the butter.
  • Next, add the cabbage into the insert and make sure that it is below the Instant Pot fill line.
  • Sprinkle nutmeg over the cabbage. Don’t just dump it in, as you don’t want it to clump.
  • Place the lid on and turn the valve to the sealing position. Set to manual pressure / high pressure for 5 minutes.
  • When done, perform a quick pressure release (QPR) and open the lid.
  • Season with salt and pepper to taste, then gently stir until it is all mixed together well.
