FAQs

What Is Refrigerator Jam?

Refrigerator (or freezer) jam differs from shelf-stable jam in that it is not made using the traditional canning process. There is no need to use pectin, no need to sterilize your jars (although you do want them clean), and you can make it quickly and easily.

Because it is not preserved, refrigerator jam needs to be stored in an airtight container inside the fridge. For longer term storage, you can put it in the freezer. If you use jars, make sure to allow some room at the top of the jars for expansion.

Can You Make This With Fresh Cherries

You certainly can make Instant Pot jam with fresh cherries. Simply remove stems and pit them before using.

Can You Can This?

I have not tried canning it, but since it is only sweetened with minimal maple syrup and does not have tons of refined sugar which helps preserve jam for canning, I am not sure if it would work. Let me know if you try canning it.

Can I Scale Up The Recipe

Absolutely. Double or triple the ingredients as long as you don’t fill your Instant pot past the maximum fill line and then cook for the same amount of time.

  1. I love that it’s healthier. It is a sauce for me, though, not a jam consistency. Thinking I’ll have to add more chia seeds and cook again on the stove as another recipe said to do until thickened.
