  • olive oil
  • ground allspice (pimento)
  • smoked paprika
  • large chicken thighs (bone in and skin on)
  • chicken broth
  • garlic purée
  • lemon
  • honey
  • new potatoes
  • fresh oregano

How To Make The Best Instant Pot Chicken and Potatoes

  1. In a bowl, combine 1 tablespoon of the olive oil with salt, smoked paprika, and allspice. Add in chicken thighs and coat well.
  2. Heat the other 1 tablespoon of oil in the Instant Pot insert using the sauté mode, then add the chicken thighs and brown on both sides, for about 6 mins total.
  3. Switch off the Instant Pot and remove any excess oil.
  4. Pour in the chicken stock and deglaze the Instant Pot insert.
  5. Add in the rest of the ingredients, place on the lid, lock it, and set the valve to the sealing position.
  6. Set the Instant Pot to manual pressure on high pressure for 8 mins.
  7. When done, allow for a 5-minute natural pressure release. Then perform a quick pressure release to remove any remaining pressure.
  8. Serve and enjoy!

How To Make Gravy For Instant Pot Chicken and Potatoes

Want to make gravy to go with your delicious lemon chicken and potatoes? It’s soooooo easy! Just follow these 3 steps:

  1. Remove all the ingredients (except the cooking liquid) from the Instant Pot and then set it to sauté mode.
  2. Make a paste of 1 tablespoon each of cornstarch and water, and add that to the Instant Pot insert.
  3. Cook on sauté mode until it thickens, stirring occasionally to prevent it from burning.

Recipe Tips

  • You need to use new potatoes for this recipe. Cut them in half, but if they happen to be really small you can use them whole.
  • Browning the chicken is not a requirement, but it does add a nice depth of flavor (not to mention lovely color) to the dish.
  • Chicken thighs work best, as chicken breast might end up drying out during the time it takes to cook the potatoes.
  • It is important to always check the temperature of your chicken with a meat thermometer. Your Instant Pot chicken thighs have cooked fully through and are safe to eat when they have reached an internal temperature of 165 F/ 75 C.

Can I Use Frozen Chicken?

Yes, you can make Instant Pot thighs chicken and potatoes using frozen chicken. You will need to increase the total cooking time by approximately 20 minutes. I do recommend that you slightly thaw the chicken in the microwave first to get the oil and seasoning coating to adhere to the meat, if possible.

Can I Make This Recipe In A Slow Cooker?

If you don’t have a pressure cooker, you can make this chicken and potatoes Instant Pot recipe using your slow cooker instead. Here’s how:

  1. Mix together olive oil, salt, smoked paprika, and allspice.
  2. Coat the chicken thighs with the mixture, then add to the slow cooker along with the rest of the ingredients.
  3. Cook on high for 3 – 4 hours.

Mediterranean Instant Pot Chicken and Potatoes

Ingredients

Instant Pot Chicken and Potatoes Ingredients:

  • 2 tablespoons olive oil
  • 1/2 teaspoon ground allspice (pimento)
  • 1 teaspoon smoked paprika
  • 6 large chicken thighs bone in and skin on
  • 1 cup (237mL) chicken broth or stock
  • 1 teaspoon garlic purée
  • juice of 1 lemon
  • 2 tablespoons honey
  • 1 pound (453g) new potatoes halved
  • 1 teaspoon of fresh oregano

Instructions

Instant Pot Instructions:

  • In a bowl, combine 1 tablespoon of the olive oil with salt, smoked paprika and allspice.
  • Add in chicken thighs and coat well.
  • Heat the other 1 tablespoon of oil in the Instant Pot insert using the sauté mode, then add the chicken thighs and brown on both sides, for about 6 mins total.
  • Switch off the Instant Pot and remove any excess oil.
  • Pour in the chicken stock and deglaze the Instant Pot insert.
  • Add in the rest of the ingredients, place on the lid, lock it and set the valve to the sealing position.
  • Set the Instant Pot to manual pressure, high pressure for 8 minutes.
  • When done, allow for a 5 minutes natural pressure release. Then perform a quick pressure release to remove any remaining pressure.

Make it with Gravy (optional):

  • Remove all ingredients from the Instant Pot and set it to sauté mode.
  • Make a paste of 1 tablespoon each cornstarch and water, and add to the Instant Pot.
  • Cook on sauté mode until it thickens, stirring occasionally to prevent burning.

    Recipe came out very well, do yourself a favor and make the gravy!
    Docked a star because this Recipe seems incomplete. Nowhere is salt listed in the ingredient list but is called for in the instructions (I used 1/2 tsp). Also, if you watch the YouTube video above the Recipe, she puts lemon slices and cilantro on top, again neither are listed on the ingredients list or instructions. I added the juice of 1 lemon then sliced one and added on top before pressure cooking.
    Recipe also seemed to be missing black pepper, so added that too. Overall, easy delicious meal!

    Tried this recipe this evening. I don’t know if I did something incorrectly, but I followed the recipe to a T. Unfortunately there was absolutely no flavor to this dish. My husband did not like it at all.
